QUESTION: Do you think that you can get the same candid flavor by cooking the yams in a sugar syrup vs adding so much sugar and can you use a combination of white and brown sugar?
I’ve seen people add a sugar syrup. We have only made candied yams this way. When you bake the sugar and’s yams together, the flavor from the potatoes gets in the syrup and you have a deeper richer flavor. We don’t use brown sugar because it creates a darker syrup and we don’t like it. We don’t use brown sugar in sweet potato pie either because it makes it too dark.
