I forgot how much I like cloudies until you started posting about them recently. This is exactly the recipe I use. I also mound them up really high and make a well in them and add cream cheese center to make a carnivore cheese Danish! Delicious 😋
My grandma used to make this in the 1970s. Her doctor put her on Dr. Atkins Diet for heart failure and prediabetes. Thanks for the wonderful memories!❤

I left out the cream of tartar, and they came out just fine. A little flat, but still good. One thing - make sure to use parchment paper. I used my silicone mat for the first batch and they stuck badly. 😢 They peel right off parchment, though.
This is going to help me go back to zero carb, started again fresh on new years day. Have to train myself to fast again as well. I lost about 30kg 3 years ago and got lost and put almost it all back on. Now to re commit and hang around you guys for help.

CLOUD BREAD DANISH Cloud Bread: 4 egg whites 1/4 tsp cream of tartar 3 egg yokes 3 Tbls cream cheese 1 Tbls coconut flour (optional) 1/2 tsp vanilla (optional) 1/8 packet sweetener* For the filling : 4 oz of cream cheese (softened) 1 egg yolk 1 1/2 tsp of lemon juice 1/8 packet sweetener* Optional: blueberries or other berries Directions: Preheat oven to 325 Cloud bread: Separate the eggs whites into a large bowl and put the yolks in a small bowl. Add the cream cheese, sweetener, vanilla, and coconut flour (if using) to the egg yolks, mix well and set aside. Don't whip egg whites until you have the yolk mixture and the filling ready** Filling: mix together the cream cheese, egg yolk, lemon and sweetener. Mix until smooth and creamy. Whip the egg whites with the cream of tartar until stiff peaks form. Gently fold in a small amount of the egg yolk mixture. Keep folding in the egg yolk mixture until fully incorporated. Line a large sheet pan (or two smaller ones) with parchment. Lightly spray with cooking spray. Divide the cloud bread mixture into eight mounds then spread slightly. Then divide the filling and place on top of cloud bread. Add berries, if using. Put in oven and bake for 25-30 until filling is set and cloud bread is golden brown. Rotate tray (or trays) halfway through baking time). When done, allow Danish to cool a bit before gently removing and placing on cooling rack. These tasted better after sitting overnight. I microwaved mine this morning for about 9 seconds because I like my pastries warm. *Sweeten to taste. I used about 1/2 a packet total of monk fruit in the raw because it's all I had and it has dextrose in it. I don't really care for the taste of most sugar substitutes so that's why I used so little. **I made the mistake of whipping the egg whites first and they starting breaking down by the time I had the other ingredients mixed.

Yeah I remember when the Cleochatra named them Oopsies back in about 2010 when she made the mistake of using cream cheese instead of cottage cheese in the Atkin Revolution Rolls. I always loved them too!!
They have been around since about 2002, I never liked the texture of cottage cheese so like lots of people used cream cheese . Cleochatra coined the name. I loved her funny blog. Do you know her real name?

I just had one after a paltry svg of beef at an eatery (i NEVER go out but there I was, w/my daughter, who wanted to eat out 🤦♀️). I had brought my food for the day with me as always THANK GOD Im an on the rd job, alllll day (10 hrs) 6 days a week so I have to bring food and eat everything cold.

I used parchment and they were completely stuck.
They can be made without cot but the cot is like “insurance” ~~ increased chance of working out
