Cousin Connie's Shoepeg Corn and Green Bean Casserole With Chicken, Hominy Casserole
I'm in Franklin, Tennessee, being a companion/caregiver with my mother-in-law, who wanted to care for a cousin in the hospital. We are staying at another cousin's while in Franklin. My mother-in-law and I came home today to a house filled with the aroma of something good.
Both of these casseroles were delicious. I hope you'll give them a try.
Hominy Casserole
3 - 16 oz cans of white hominy, drained
1 - 8 oz carton sour cream
1 - 4.5 oz can chopped Green chilies
2 - cups shredded cheddar cheese
Combine hominy and remaining ingredients and spoon into an ungreased 8-inch square baking dish. Bake at 350 degrees for 25 minutes.

Recipe Below Chicken, I use chicken breast, boiled and chopped or shredded 8 oz sour cream 1 can of cream of any chicken soup 1 stick of butter 2 sleeves of Ritz crackers Your choice of seasoning I used Greek yogurt instead of sour cream and added some ricotta cheese. I love your fried chicken, Helen! Do you get it to room temperature before you fry it? And I noticed you don't cover it-- do you ever cover it?
Hey Patti, I took this dish of chicken out of the frig and waited about 45 minutes. On days when I was in a hurry, the chicken would "get room temperature" by the time I took it out of the frig to cut it up, mix flour and seasonings, mix buttermilk and egg, then start the process of frying up the chicken. It was not a rule set in stone for me that the chicken had to be at room temperature. No, I don't cover the chicken after it's fried. 20 years ago, I could get a whole chicken in that cast iron Dutch oven. Chickens have gotten bigger. Years ago, I fried the entire thing all at once. I started with the dark meat, letting them cook for about 10 minutes, then added the white meat. I took the chicken out of the Dutch oven simultaneously, piece by piece. There was no need to cover the chicken 'cause it was fixing to go on the table for eating. Usually, there was never any left.

Helen how are you? I love fried chicken, I never heard of putting bacon grease to fry the chicken but It would take a lot to fry the chicken.
I'm fine, Steph. Thank you for asking. Yes, bacon drippings are used to cook chicken and many other foods. Years ago, when I made breakfast for my husband every day, I could save enough bacon drippings to fry chicken.

Hey Mrs. Peach, Nice to hear from you. Yes, buttermilk or milk. Sometimes, I make them vegan for my daughter using plant-based milk. One lady I knew liked using cream. I haven't used yogurt. I do have some Greek yogurt. I might try those and see how they taste. I want to experiment when cooking.

Exactly Janet. It's an old recipe from a 1912 cookbook. Being an old recipe doesn't mean it will be good, either. It's the gummy texture that threw me off.
I think it would have been good to have a little baking powder or baking soda in it..or use self rising flour...

Jersey, It's just me here at home. I'm widowed, and my children are grown and gone. I did share with my sister and a cousin. I could have eaten the whole thing but I didn't need all those calories. Sometimes, I make vegan things for my oldest daughter, who lives at the other end of my driveway. Yes, it's expensive when you have a family you cook for every day. I spread those expensive things out over the months.
