Lemon Curd, Greek Yogurt Snack With Fresh Blueberries

  • Lemon Curd is an excellent addition to your cooking arsenal. Frankly, it is easy to prepare. If properly stored, it will last in your refrigerator for 1-2 weeks. Lemon curd can also be frozen. This is my first attempt at making my own curd. We all fear the unknown, but now that I made the curd, I wonder why I was fearful? The recipe I chose (below) comes from a set of cookbooks I've used for years. The recipes from these cookbooks have never disappointed me. Yet, I didn't know if it would be a good recipe. I was not disappointed. The lemon curd turned out fine. Below, you will find ways to use lemon curd with everyday foods. Lemon curd has unlimited potential.
    Lemon Curd
    1/2 cup butter or margarine (I used salted butter)
    1 1/2 cups sugar
    Grated rind of 2 lemons
    1/2 cup fresh lemon juice
    6 eggs, slightly beaten
    Put all ingredients in the top part of the double boiler over simmering water. Cook, stirring constantly, until reasonably thick. Cook and store in the refrigerator. Use as a filling for tiny tarts or as a spread on ladyfingers or spongecakes. Makes about 3 cups.
    I added lemon curd to my plain Greek yogurt topped with fresh blueberries. It was delicious. I also added the juice of half a lemon, and it was fantastic!
    Ways in which to use lemon curd:
    A great filling for tiny tarts, spread on ladyfingers, spongecakes, fill cupcakes or crepes, spread on toast, muffins, crumpets, or make lemon bars. Serve with scones, croissants, pastry, or stir into yogurt. Let's not forget pancakes and biscuits. How about pound cake or a trifle made with angel food cake, lemon curd, and fresh whipped cream with the addition of blueberries or strawberries? How about some lemon curd with your gingerbread? Lemon curd can also have whipped cream folded into it for filling cream puffs. Serve over fresh fruit as a garnish.

    Shelf Life: When thawed, prepared lemon curd can be frozen for up to 1 year without quality changes. To thaw, place the container in a refrigerator at 40°F or lower for 24 hours before intended use. After thawing, consume within 4 weeks.
    'Lemon Curd' is originally English and dates back to the early 1800s. It started out by adding lemon juice to the cream. The whey was separated using cheesecloth. The lemon curd was once called Lemon Cheese because separating the whey is the same as making cheese when you separate the milk solids in cheesemaking.
    In France. lemon curd is known as Creme de Citron.
    Instead of thinking, "The world is your oyster," believe, "The world is your lemon curd."

    Thanks for bringing the lemon curd , it was delicious! You should have taken some of the scones home because I have a lot left with out any lemon curd and you have plenty of curd without any scones !

      I've enjoyed this lemon curd more than I thought I would. It was really good on breakfast fruit.
