90 Minute Dinner Rolls

- This is a quick and easy recipe for making one dozen yeast rolls. You will be delighted at how quickly you can make homemade yeast rolls. To make these rolls vegan, use plant-based butter and plant-based milk.
90 Minute Dinner Rolls (Makes 1 dozen rolls)
2 to 2 1/2 cups unsifted all-purpose flour
2 tablespoons sugar
1/2 teaspoon salt
1 package yeast (or 1 tablespoon yeast)
1/2 cup milk
1/4 cup water
2 tablespoons margarine (use can use butter or shortening)
Mix 3/4 cup flour, sugar, salt and undissolved yeast. Heat milk, water, and margarine to 120*F-130*F. Gradually add to dry ingredients and beat 2 minutes at medium mixer speed. Add 1/4 cup flour. Beat at high speed for 2 minutes. Stir in enough additional flour to make a soft dough. On floured board knead 2 to 3 minutes. Divide dough into 12 equal pieces. Shape into balls. Place in greased 8-inch round pan, or muffin tins.
Pour a 1 inch depth of boiling water into large pan on bottom rack of cold oven. Set rolls on rack above the water. Cover. Close oven door; let rise 30 minutes. Uncover rolls; remove pan of water. Turn oven to 3758F. Bake 20-25 minutes, or until done. Remove from pan to cool. Serve warm.
*Helen's Note: I set my muffin tins in the airfryer on proof to let the rolls rise. I cooked them for 15 minutes in the airfryer. The first time I cooked these rolls was 11 Aug 1987. My note states: Very Good.

Yes, I've milled my own flour from wheat berries. I'll check to see if my wheat berries are still good. I love baking bread, and I love eating it, too!
And can they be frozen after cooking?

No, these are a different recipe. I'll have to make some yeast rolls, which I make on Thanksgiving and Christmas.
