Wacky Cake or Chocolate Cake

This simple chocolate cake will please your loved ones. It is made from pantry items that most of us have. There are no eggs or milk. I did use melted butter in my recipe, but this cake can be made with oil. During World War I, The Depression, and World War II, there was rationing and a lack of food during the Depression. This is a great cake for you vegans out there.

Wacky Cake
1/3 cup baking cocoa
1 1/2 cups all-purpose flour
1 cup sugar
1 teaspoon soda
1 teaspoon vanilla
1 stick butter, melted
1 cup water
2 teaspoons vinegar
Melt butter in the pan where you will cook the cake. Mix the dry ingredients. Mix vinegar, vanilla, and water and add them to the dry ingredients, mixing the wet ingredients into the dry ingredients. Add the melted butter and blend in well. Pour the mixture into the pan. Bake at 350*F for 20-25 minutes.
One-Minute Fudge Icing: 1 cup sugar, 1/4 cup cocoa, 1/4 cup milk, 1/2 cup butter (1 stick). Combine ingredients and bring to a boil. Boil 1 minute. Remove from the heat and add 1 teaspoon vanilla. Beat until it begins to thicken. Spread on cake. Nuts can be added to the cake, icing, or both.
Alternative Icing: Mix 1/2 cup powdered sugar with a heaping tablespoon of cocoa, add 1 teaspoon vanilla and some milk or buttermilk to make a smooth icing.
