    Most people love potato salad. They love it because it is usually a family favorite, a tradition handed down to their mother from their grandmother. Why do you like, or perhaps you dislike, potato salad? There are dozens of ways to make it. There is no right or wrong when making potato salad. Beauty is in the eye of the beholder. To each his own. My personal preference is homemade potato salad.
    Being a Southern girl from Tennessee, I'm used to seeing potato salad at potlucks and family reunions, served alongside grilled and smoked meats or as a side to hamburgers, bratwurst, BBQ pork sandwiches, and hot dogs. A plate of fried chicken, potato salad, baked beans, and corn on the cob can't be beaten. It was good enough for my breakfast this morning!
    Potato salad is generally thought to be of German origin, originating from immigrants who came to America in the 1800s. Most people think of potato salad as a Southern dish, but plenty of places in this country serve it. We're not the only country with a version of this tasty dish. Other countries that make potato salad include Japan, Russia, and Spain.
    Helen's Potato Salad
    Today's potato salad included Baked potatoes, eggs, orange bell peppers, black and green olives, celery, and onion. The dressing was mayonnaise, Greek yogurt, and yellow mustard, and the spices were salt, pepper, paprika, and ground celery seed.
    Cousin Jon's Potato Salad
    Baked Potatoes, eggs, mayonnaise, pickle relish, green onion, celery, salt and pepper.

    I’ve never had potato salad with all that in it. I might not like it with olives though 😊 I like the green ones but not too many at a time. The way I like to do it is to boil the potatoes and mash them up without the skins. I hate potato salad with hard chunks of potatoes. A couple eggs, dill pickles, onions, bit of mustard and celery if I have it and of course mayonnaise.

      Hey Martha, Thank you for your great response. You prove my point that everyone is different regarding potato salad. I forgot all about putting pickles in it. I usually add some pickles. I appreciate your comment. :)

    I leave The potato skins are mine while they’re cooking and I add onion and celery and salt and pepper while they’re cooking

      Yes, I've been eating potato salad for about two days. It's the perfect food, protein, carbs and fat!

      Hmm, a touch of horseradish would be good. My mother used to add about 1 tablespoon to her Lime Jello Salad. You never ate the salad thinking there was horseradish in there, but she left it out one time and we all said, "It taste different." Thank you @janeknisely4383 for your comment. I appreciate it.
