My great grandmother always used red potatoes. She put them in a kitchen towel as they finished and squeezed several lemons over them. She always used Helman's mayonnaise and added celery, salt and pepper. She also added a few eggs. We still make it to this day and love it.

When salting potato salad a pro tip is to put in the salt and let it rest in the fridge for 15 before adding more, cuz often times what happens when salting the salad is that the granulated salt is not dissolved yet so its not evenly spread accross the salad and will taste bland. Once it sits the salt dissolves and it spreads more evenly when mixing, making the salt content more uniform and lets you get away with putting less salt than you thought necessary.

I keep potatoes cooked ahead. I just wash them, cut any dark spots, and then pressure cook about 10 of them. I drain and cool them but I might use some immediately for potato salad. Depending on how much I'm making determines whether I cook my onions a little or if I cut fresh. I just made one potato worth and I cut a little fresh onion. Oil or Mayo? Depends on my mood. But most generally it's olive oil and wine or cider vinegar. And mustard. Horseradish mustard. Dijon mustard. Even cheap yellow mustard. Grated ginger. Black pepper. A little salt. Tonight I had chives.

My Mom made the best potato salad i ever ate. She taught me to add the vinegar to warm potatoes, sweet pickle relish, diced onion and diced celery, salt, pepper, a little garlic powder and when all cooled down, mayo to taste. Mix gently until just blended and don’t be rough or over mix. Make it the day before you want to eat it.

No olives for me. I put a bit of mustard and some diced pickles in with the mayo, just enough to taste without overpowering anything else

Funny, I put green olives with the red pimentos in my potato salad also. But I sliced them into three or four pieces so they go further in the potato salad. They also look prettier.

Swap the olives with pickles and vinegar with the pickle juice and you got the traditional original German potato salad❤

I use pickles instead of olives and use the pickle brine instead of white vinegar.
Also some dijon or brown mustard. Maybe paprika after plating for color and chives for garnish.
There are hundreds of ways to make potato salad.

Try this one on for size: red potatoes (do no peeling!), diced boiled eggs, diced dill pickles, diced polish sausage, 50/50 blend whole egg mayonnaise and salad cream (e.g. Heinz), salt and pepper to taste. The ratios of the diced additions are up to you, I'm in favour of being a little heavy handed. Oh, some sort of diced onion is nice also, but I don't tend to because children complain
