My great grandmother always used red potatoes. She put them in a kitchen towel as they finished and squeezed several lemons over them. She always used Helman's mayonnaise and added celery, salt and pepper. She also added a few eggs. We still make it to this day and love it.
1 or 2 teaspoons of mustard makes a huge improvement I find. Other than that, the method here is how I've been making it for 20ish years (again, only difference is adding a bit of mustard to the mix)

My mom would peel her potatoes before boiling and as soon as they were done drain them well and then splash them with the vinegar. The potatoes would soak up the vinegar and it just makes it so much better

It's tough to admit it but the use of those green olives w that brineyness and the pimiento rather is just genius. And the plain white vinegar to season the potatoes . This recipe is beautiful. 🥹

I always find that peeling eggs under running water is the best, plus it washes away all of the residual shell. Just throw them into a dish towel together and roll them around and they're dry.
You have to let the potato salad sit in the fridge for at least 24 hours before serving. It gives the flavors a chance to really meld and makes for a demonstrably better flavor.

I use celery seed. I think it's what we are raised on that makes it a "perfect" recipe. I do like the tips on boiling the poatoes with their jackets on and adding eggs to finish with the potatoes. I love the hack about how to chop the eggs! How clever!

It's interesting to see what goes into American potato salad. In the UK, it's usually chopped new potatoes (like Jersey Royals), diced onion/red onion/spring onions (scallions)/shallots, with Hellman's mayo, salt, pepper and chopped fresh herbs like chives or parsley.
When salting potato salad a pro tip is to put in the salt and let it rest in the fridge for 15 before adding more, cuz often times what happens when salting the salad is that the granulated salt is not dissolved yet so its not evenly spread accross the salad and will taste bland. Once it sits the salt dissolves and it spreads more evenly when mixing, making the salt content more uniform and lets you get away with putting less salt than you thought necessary.
I personally like putting a bit of dill relish instead of straight vinegar and olives in mine for that flavor plus a few squirts of mustard and plenty of dill weed and pepper for color. But this is lovely and I love that egg hack! Another great one, Frank!

I really like onion with my potatoes, I'd definitely add some finely chopped shallots or something, maybe chop in some pickled red onion along with the pickling juice. That being said, I'm a huge fan of mustardy potato salads, maybe with some dill and green beans and radishes. Probably some capers. And definitely some shallots.

That is not my salad and everyone that has eaten mine says it’s the best. I use eggs, green onions or a sweet small diced onion, also a stick or two of finely chopped celery. My dressing is mayo , a little mustard , some finely chopped pickles and pickle juice .I add a little cream to smooth it all out then add it to my potatoes. The only spices I use is salt and pepper with paprika sprinkled on the top. Sometimes I also add about quarter cup of bell pepper .. Colored ones make it pretty so does parsley.

That's a clever technique to chop the eggs. My variant is to add chopped cornichons to introduce the vinegar element into the dressing, along with some fresh dill. Also, I think it's really important to dress the potatoes while they are still warm.

Mix gently until just blended and don’t be rough or over mix. Make it the day before you want to eat it.

Let me start off by staying that I really enjoy your videos. I make a version of potato salad that converts folks that usually strongly dislike (hate!) it. Cooled boiled potatoes like you described and same with the eggs (include eggs folks!). Then I mix in a small amount of mayo, mustard, finely chopped chives (or green onions), Dill pickle juice (secret ingredient!), salt, pepper and smoked paprika. Finely chopped crisp bacon is optional yet amazing.
Dill pickle juice is not a secret! Look through the comments here & you'll see many people mentioning it. My Mom made it that way with diced pickles too as I grew up as a kid in the 60s & 70s.
My first introduction to Hellmann's mayo was as a kid at my friend's house. They had potatoe salad with sliced green olives, white onions, celery and Hellmann's! Oh my goodness. It was so simple but so delicious! I have developed my own potato salad over the years but I keep some of it while I making it for myself and my adult daughter and use the green olives. It takes me back. Potato salad is definitely in everyone's happiest memories of family and friends!
I sometimes make potatoes salad since it easy and can stored for a few days. However, I like to use Kewpie mayo with 1 teaspoon of mustard. I love a bit of sweetness in my salad tho.
Miracle whip is definitely not gross it is very yummy. Sometimes I use helmans sometimes I use miracle whop in egg salad and potato salad and macaroni salad and sandwiches and hamburgers and tuna salad..yumyumyum
The olives I had on hand were wonderful, Greek style, marinated ones. I put both the olives and their vinegar brine into the salad and it was a winner.

I always mix the mayo, salt pepper, vinegar, etc really well before adding to the potatoes and eggs. Better overall distribution of seasoning.
I think I'd NOT prefer that. So each bite has it's own diverse flavor and it's not all exactly the same.
I do the same thing. Mixing un-combined dressing ingredients with the potatoes will result in mushy potatoes.

I add a little melted butter to the warm potatoes before the mayo. The butter adds flavor and keeps salad creamy and moist.
Instead of olives, I like to thinly slice cucumbers, salt them, pat dry, and then add that into the potato salad. It adds a very nice crunch to it.

Then I mix in a small amount of mayo, mustard, finely chopped chives (or green onions), Dill pickle juice (secret ingredient!), salt, pepper and smoked paprika. Finely chopped crisp bacon is optional yet amazing.
Dill pickle juice is not a secret! Look through the comments here & you'll see many people mentioning it. My Mom made it that way with diced pickles too as I grew up as a kid in the 60s & 70s.
That’s pretty much how I make mine except I use a tablespoon of yellow mustard and dill pickles instead of olives.
We like finely chopped celery and onion in our potato salad and though we like eggs and green olives, not in potato salad. Love your videos, Frank!

My first introduction to Hellmann's mayo was as a kid at my friend's house. They had potatoe salad with sliced green olives, white onions, celery and Hellmann's! Oh my goodness. It was so simple but so delicious! I have developed my own potato salad over the years but I keep some of it while I making it for myself and my adult daughter and use the green olives. It takes me back. Potato salad is definitely in everyone's happiest memories of family and friends!

Miracle whip lol I add dried dill weed in my salad Mustard given it little tangy to it. It’s my mom’s and grandma’s recipes.
I sometimes make potatoes salad since it easy and can stored for a few days. However, I like to use Kewpie mayo with 1 teaspoon of mustard. I love a bit of sweetness in my salad tho.

Miracle whip is definitely not gross it is very yummy. Sometimes I use helmans sometimes I use miracle whop in egg salad and potato salad and macaroni salad and sandwiches and hamburgers and tuna salad..yumyumyum

I love potato salad! I add diced onion/shallot, a pinch of dry mustard, and top it off with paprika. Oh, and I use a mix of mayo and Miracle Whip!
The olives I had on hand were wonderful, Greek style, marinated ones. I put both the olives and their vinegar brine into the salad and it was a winner.

No olives for me. I put a bit of mustard and some diced pickles in with the mayo, just enough to taste without overpowering anything else
