Savoury Johnny Cakes | Dishes From Belize Collaboration |
These Johnny Cakes are the number one most popular breakfast food in Belize and have been for many years now. Basically the recipe for the cakes has remained the same, but the filling is very much up to the individual. you can double the amount of sugar in the cakes if you are using fruit and maple syrup as a filling. Or, you can simply use them to take a savoury filling like I have done below.
INGREDIENTS FOR JOHNNY CAKES
500 grams plain flour
1/2 tsp salt
2 tbsp caster sugar
1 tbsp baking powder
2 tbsp melted butter
100 ml milk
130 ml water
Rice bran oil for frying (or neutral high smoke point oil)
FILLING FOR JOHNNY CAKES
1 rasher of bacon per cake
1 egg whisked
Small measure of grated cheese

Hey brother. I am so glad that you decided to make these. When I was a child, I grew up eating something similar on the island. In Trinidad they are called fried bakes and they are the vehicle for some of the most delicious breakfast fillings. You, my friend are "the man". Thanks so much for being a part of this family. This looks just incredible, I just love noodles and Asian cuisine. My only suggestion is to bring the camera out a bit, to enhance the angle and it will help with reducing the noise too. A lager would go well! Keep up the great work. James

Thank you James so much for the suggestion. I do need to buy a new tripod, one that can sit on the floor in front of the stove. But for now I should stop being lazy and turn the mic around 180 degrees so that it points in the opposite direction to the pan. I love Asian noodle dishes too, as it allows you to load the dish with so many different vegetables in summer. Asparagus season starts here in a weeks time, along with other vegetables, so i'm looking forward to that.

I had not tried it before yesterday Anadi, and I would put it in the same category as venison as the flavours are very subtle. I still prefer venison or beef rump steak. Having said that, I am still in awe of how tender Wagyu is. I am a huge fan of German bread though and baked in a wood fired oven cannot be beaten. Thank you for your thoughtful comment my friend.

@CookingAroundTheWorld we are living in the south of Germany. So it's very hard to get good seawater fish and seafood. We know a hunter. So we are glad to become very often venison. That's awesome. Traditionally, horse and donkey have good meat, too. Wagyu is too soft, and the taste is like brown butter and mushrooms instead of beef.

As long as you wait to make sure your yeast gets started and that you give it time to rise in a nice warm kitchen. This dough is high enough hydration so that you don't have to knead it. bread is all about temperature, time and process. The last batch I made of this I used the supermarket s own brand flour and it came out perfect. So it is a very forgiving recipe. Let me know how it goes old chap.
