I'm down to only 4 servings left in my freezer, but as luck would have it my local supermarket had a special today on selected vegetables all at 79 cents per kilogram. Four canvas bags later I stumbled out of the supermarket like a man who'd been stranded in the dessert for a week. So i have supplies to make more soup this weekend, as long as I have freezer space. This is my way of saying this soup freezes easily Rebecca and tastes as good as the day you make it. I bought blueberries today.....I'm so excited.......have a great weekend my friend.

Hi John this is such a hearty soup full of flavour especially adding the Ham Hock I would make this anytime of the year , no reason to wait for this deliciousness to eat just in winter lol thanks for the recipe , have a good day

Thank you Andrew for your kind words and I whole heartedly agree about this soup being seasonal - I eat it all year around, usually with freshly baked bread toasted. the bacon hock does make the main difference in flavour, but the grated root vegetables and pumpkin adds great flavour and also a really thick texture. Hope you make it one day Andrew.....all the best my friend and have a great weekend.

I pretty much start with all root vegetables, including parsnips and raddishes. squash and butternut work well too in bulking up the soup. Thanks so much for stopping by.

hey John, I'm glad you made a soup too! I thought I was literally crazy for making a stew this time of year, but my chicken stew is an American classic so that's why I went with it! I do not celebrate fourth of July either being in Canada. looks really delicious here John and I agree you can use up tons of veggies laying around making a soup like this. Have a great rest of your weekend!

I thought the same Anadi, but then I was watching some vlogs from Utah, Alaska and other northern states, some of which were knee deep in snow still. Also when I think about minestrone , which is often had in summer, I decided it would be fine. As you say it is good for using up stuff. I had half a can of chick peas and half a leek. I'm sure the vegetables i put in it next time will be different. Thanks for dropping by and take good care of yourself and your family.

Hey John. Our family likes all kinds of soups and stews. As a starter or main dish. Good seasoned vegetable soups are so tasty. For today dinner, I'll cook a leek cream soup as a starter. Tomorrow for lunch, a vegetable soup with mainly green beans and for dinner an asparagus cream soup as starter. Yes, we like soups! 😅

You guys do like soups and the great thing about soups is that any vegetable or meat is fair game. The asparagus cream soup would be my favourite in your line up. Hope you had a fabulous weekend.

@CookingAroundTheWorld hey. Next week officially ends the German asparagus season. It's our favorite vegetable. Now we have a lot of in the freezer and all the shells too.

nice choice of fresh veggie ingredients here ... I'm not a soup fan (you won't find any in my channel 🫤), but your contribution looks healthy, tasty and delicious, all together. Greetings, Boris.

I am not into soups either, but this is the exception along with French Onion soup. Again it is the flavour combinations that really make this with almost a sofrito being the backbone of the soup. Thanks Boris for your kind words and hope you have a wonderful weekend.

I like your intro, John. I have had a slow cooker for years and I love it. They are great for soups, chillis, stews, and roasted meat among many other uses. OK, please do tell; how did you get the camera under the grater? I love the ingredients in your soup. Looks delicious. I love making soups to use my vegetables, and they are so versatile and can be frozen for quick meals or lunches later. 🌞🌞 Good luck with the snow. 😋😋🙂🙂

Slow cookers are great, but I would love to be able to turn it off with my phone if I was running late. I have a camera that fits inside my grater, but in the past i have sat a piece of Perspex on 2 bricks with the camera underneath to video grating and chopping from underneath the vegetables. thanks for stopping by Debbie.
