- I remember as kids my mother making a gingerbread loaf in the weekends, when other family would sometimes visit. She would slice the gingerbread loaf into 1/2 inch wide slices and butter one side. It was then arranged on a serving plate, where it possibly sat for about 4 and one half minutes. My cousins and I would all stand watching, nursing severe anxiety attacks as the adults started taking pieces. If the situation looked like it would take a turn for the worse, my mother would step in and start cutting the remaining pieces in half before the children helped themselves. And thus, another Sunday came to a close.
Ingredients For : Gingerbread Loaf : Simply Yummy :
1 cup of high grade flour
1 cup of rolled oats (blend in food processor)
1 tbsp ground ginger or 2 tbsp finely chopped crystalized ginger
1 tbsp cinnamon powder
A pinch of salt
2 eggs
1/2 cup of sugar (whisked with the eggs)
50 grams of melted butter
2 tbsp of warm golden syrup (Combine with butter)
1 tsp baking soda
1 x 140 gram pot of natural yogurt
2 tbsp milk
2/3 cup of sultanas (fold into mixture gently)
Pour into a lined and greased standard loaf tin. Bake for 55 minutes in an oven at 180 degrees C or until knife blade comes out clean.

Ohh, yes,,...so nice, so rich, and the taste of ginger is so GREAT! Nice cook here! (some times I just leave the egg shell in,...gives a little texture! LOL)
