      You are so correct, it hurts!!! I only put enough potato in the fillings to bind the other vegetables. The toasted yellow mustard seeds with the Ras El Hanout seasoning gives the filling such an amazing spicy flavour. When you say "Hola at your girl" I get the giggles and I have to rewind your recipe hahaha.....,it's your voice again Michele.....thanks for dropping by my spicy friend.

    this looks delicious, what do you do with the rest of the potato? I'll have to try this ! Can you make a bulk of them, and stick'em in the freezer before the second baking? Would love to make them as side dishes

      The last lot of leftover potato i made into croquettes. Simply add your favourite seasoning, shape into a cylinder, cover with breadcrumbs and chill in the fridge for at least 2 hours. I then shallow fry them till golden brown on a high heat. For the baked potatoes, they freeze really well in snaplock plastic freezer bags with as much air squeezed out as possible.
