BEEF CURRY
Filipino style beef curry is made of beef, curry powder and coconut milk. It's a comfort food on a cold rainy day for us. You may use cubed beef or beef strips. Chili is optional but recommended. Best served with freshly cooked rice. Yum!
Ingredients:
1.5 - 2lbs. Beef chuck
1 can (2 cups) coconut milk
2 medium potato
1 carrot
1 green bell pepper
1 red bell pepper
5 cloves minced garlic
1 medium onion
thumb of ginger
curry mix
cooking oil
1-2 tbsp fish sauce
salt to taste
ground black pepper
2-3 bay leaves
1-2 cups water
chili pepper (optional)

Basically the Leidenfrost effect is making this bare steel pan non-stick. The droplets of water and skittle across means that effect will happen once the egg is dropped in, also with a buffer of superheated oil to transfer the heat to the egg so the proteins starting binding up and solidfy before it reaches the steel.

The oil turns into unhealthy oil when it reaches a temp.that te oil starts to smoke.

with that amount of oil eggs don't even make it to the pan surface. any pan/skillet would be non-sticky that way.

It looks like you added more oil, nothing sticks for me except when I'm trying to fry eggs and I don't like to use a lot of oil.
Hello Charley. You may use less oil. I have been using lesser oil now in frying eggs. Let me know if it also works for you.
The problem is the eggs cook too quickly on the bottom and get way too crispy. This is why I use cast iron. My eggs are perfect without being overdone on the bottom.. if you like them that crispy…then more power to you.
