  • Super Light & Fluffy Vanilla Chiffon Cake

    Ingredients
    (6 inches round tin)
    (A)
    1. 2 egg yolks
    2. 20g (2 tbsps) corn oil
    3. 30g (30ml) milk
    4. 1/2 tsp vanilla
    5. 40g (1/3 cup) cake flour
    6. 1/4 tsp baking powder
    7. A pinch of salt
    (B)
    1. 2 egg whites
    2. 40g (4 tbsps) sugar
    (C)
    1. 45g (1/3 cup) soften cream cheese
    2. 15g (1 tbsp) sugar
    3. 20g (2 tbsp) heavy cream + 1/2 tsp sugar
    Preheat oven at 125°C
    Bake at temperature 125°C for 23 minutes
    Baking time may vary depending on the type and accuracy of oven.

      Did you bake at 125 C?? I have made numerous chiffon cakes and never baked below 150 C

      @@s.adams239 it was a few years ago so can’t quite remember but I’m sure I did bake at this temperature on a fan oven. My oven is really hot

      For my experience, the cake comes out same in good quality and taste. most important the time and temperature must in well control.

      Kimiya Lim yes, also noticed that the recipe contained lower flour and oil as opposed to traditional ones baked in ungreased tube pans. Thanks! Have a great weekend!=)

    Hi, I only have 9 inches of baking pan, can I make 1 1/2 of your recipes measurement ? to create the same high of cake as yours.. thank you..

      Hi, for 9 inches of baking pan, I suggest you double my ingredients measurement, baking time may need to increase to 30~35 mins. Have a good try, happy baking! :)

      Hi Jameson, the purpose of banging the cake after taking out from oven, is to knock out the hot air immediately, and this result will help cake sink lesser.

      Hi Anketa, yes, they will become very soft and fluffy cupcakes. Since cupcake is in smaller size, so you need to reduce baking time to around 20~25 minutes, depending on your type of oven, you need to adjust accourdingly.

    Can you let me know what's the difference between cake flour and all purpose wheat flour or just flour ?

      Cake flour is a low protein flour that has a protein content of about 8% and is usually bleached, which gives it a very fine texture. All purpose flour has a protein content of 10~13%, which has higher gluten. If you want to make a really soft cake, reach for cake flour.

      Hi Na fii, yes, you may replace with canola oil, safflower oil or other plant-based, flavorless oil. But olive oil and peanut oil, has a distinct taste that may not work well for baking or other recipes.
