I made this casserole this week. I used frozen riced cauliflower since I had some already, and I used a whole head of cabbage. I don't typically use such a large amount of nutritional yeast, as it can sometimes overpower other flavors, however it was very good in the casserole. The Dijon mustard comes through and it compliments the nutritional yeast and cabbage very well. It was also great after reheating leftovers.
I have made this quite a few times. I have made it with California blend (cauliflower, broccoli, carrots) frozen vegetables as well as adding frozen broccoli. Taste great no matter which I use, although I now just use frozen vegetables. Thanks again for a wonderfully delicious recipe.
I voted and said that one of the veggies I would like to see videos on was cabbage. I think I see a video on recipes that include certain veggies😁 How did I forget about this one!

Hi Jill, I tried this Cauliflower recipe and it is great! The Sause has just enough kick too it to make it interesting. I was very pleased with the overall taste. I don' think you could add much to improve the taste. Charles

I think if they are willing to eat cauliflower they’ll be willing to eat most vegetables 🤣 I’m always the one who brings a vegetable dish to our monthly church potluck-some sautéed Brussels sprouts, green beans water chestnuts and slivered almonds, etc. and it’s heartwarming to watch it all disappear!💕Cathy

Looks delicious, but this recipe is a week late! Last week I had a huge cauliflower and cabbage fresh from the garden, and just instant pot cooked them together because I didn't know what else to do. I'll definitely have to try this recipe!

Made it! 🙂 Only problem is I’m the only one eating it so I turned it into a meal prep for the week. BUT, quickly discovered this was such a light meal that I’d have to double up on portions to feel satisfied. Ended up cooking a 2nd cauliflower as a side of veggies. Forgot how much I actually love cauliflower 🙂 so didn’t mind at all having a side of cauliflower with a cauliflower casserole. Still felt quite light as a meal by itself so maybe next time I’ll think of some kinda “vegan meat” or more protein to add to it. I work out quite a lot so my stomach laughed when I turned that one dish into 6 dinner meals for the week. 😀 Shoulda been 4 probably. That said I do love how healthy this felt. Comfort food tasting yet quite light. I added more seasonings to the cheese sauce as I tend to like a lot of spices. Thanks for this one! 🙂
My gosh this tasted so good. As I write this comment, all I can think about is when I will have it again. Next time, I'm going to use frozen broccoli and see how it goes.
I had to look up that blender you use. I’ve only seen the guys from The Happy Pear use that one. I never understood why it is in that enclosure but when I looked it up it said it blocks the sound. Now I need that one! I’m constantly bringing my Vitamix to my basement in the mornings to make a smoothie without waking up the entire house!
Hi Patty. I found this enclosure for my Vitamix and bought it. Expensive but worth every penny I spent. Couldn't handle my Vitamix noise either. They have different models depending on what model Vitamix you have. My husband said to me "you spent what on a box?" Then I used it and he said "Whatever you spent it was worth it".

You could use another green like kale or collards. Not sure what you mean by something instead of a frying pan. The frying part is to precook the onions, celery and cabbage. I suppose you could just put those ingredients in the casserole without being cooked first and maybe bake it a little longer.
I need some advice about this recipe. I made it for dinner tonight and it came out so dry. The sauce didn't seep down into the mixture like I thought it would. I followed the directions exactly. I even watched the video 4x to make sure I had it right. But to our taste, it needed moisture. Any comments about this would be appreciated. Thank you!

I just made this. The cheese sauce was bland so I added more seasoning to it and I added a lot more seasoning to the vegetables. I did not cook with any oil. It is in the oven as we speak

thanks! you use a lot of cashews in creams in baking. And there are a lot of nuts in the dough. Therefore, it is better to replace the cream with soy and date cream? In Asian countries, cream for cakes is made from sugar and white beans. instead of beans, I take soy and soy milk and a little lemon juice. According to Michael Gregor's DailyDozen system, many nuts cannot be eaten. Neil Barnard also says that you shouldn't eat a lot of nuts.
Reminds me of an old favorite vegetarian recipe I used to make from the Moosewood Cookbook, Cauliflower Marranca, except that includes mushrooms instead of cabbage and celery, and includes basil, so I'm thinking of trying it adapted that way.

I think it is much easier to maintain my weight eating WFPB than it was with the standard American diet for sure.
