    It's based on Pierre Herme patissier's recipe book, "Larausse des des deerts."
    -Ingredients
    180g unsalted butter (softened)
    zest of one lemon
    80g sugar (cookie dough ingredients)
    60g sugar (cookie topping)
    4g salt
    250g cake flour
    -Recipe
    1. Wash the lemon clean and dry it.
    2. Use grater to grind lemon zest.
    3. Stir the unsalted butter(softened) with a food processor.
    4. After mixing add lemon zest, salt, sugar (80g) and mix.
    5. Mix the flour in the dough mixture and evenly with a food processor.
    6. Divide the finished dough into 6 pieces and roll it thin and long, about 30 cm long and 2 cm in diameter.
    7. Pour 60g of sugar (cookie topping) into a tray and coat dough surface.
    8. Wrapping the dough and chill in the refrigerator for 2 hours.
    9. Cut the chilled dough into 1.5cm cubes.
    10. Lay out the cooking sheet in the oven pan and the dough about 4cm apart.
    11. Bake 15 minutes in preheated oven at 170℃ / 338℉. (You have to grill it enough to not smell like flour.)
