Thank you Rie for telling me I can freeze scallions! When I was young I met a Japanese girl in school. Our mothers met and became fast friends. She taught my mother to make what she called Japanese snack. Ramen hot dogs and cabbage. We invented many variations over the years. My mother loved the original and when I was taking care of her in her 90s she was always very happy when I made it. One of the variations I made was chicken scallions and slivered almonds. I always have the chicken the almonds and ramen but not always the scallions. Now thanks to you I will! Going to buy a big bunch tomorrow!

No family secret to the recipe it was shared between cultures long long ago. The original was hot dogs sliced up stir fried with the cabbage. The ramen was cooked just in boiling water. The seasoning packets were divided. Half went into the cabbage mixture half went in after the ramen was cooked and combined with the cabbage. The chicken version was chicken breast slivered almonds and and scallion. Same thing ramen boiled in water half the seasoning went into the chicken the other half when the boiled ramen got combined. It is addictive. I made it for my sons I made it for my mother and now I make it for myself. Thank you Hirokimo thank you Ayako and thank you to my mother. She gave me the love of cooking!
If you don't want to freeze them, the other great thing about scallions is you can just stick em in a jar of water and change out the water once a week and they'll keep growing! I bought scallions once from the store and they've lasted me a year.
I never liked natto growing up but then I ate it fresh when I went to Japan and realized what a world of a difference it makes when you eat a fresh, not frozen natto. Now, whenever I go to Japan, I eat natto everyday and will even go to the convenience store and buy the natto maki for breakfast or a midnight snack. I like adding chopped green onions to my natto, if I'm eating it with a bowl of rice.
I made this breakfast this morning with a few alterations, since I don’t like eggplant I substituted that for zucchini, and I’m allergic to soy so I decided to make some red bean paste instead since I like to have a bit of sweetness with salmon when I eat it and it all went so well together. I usually don’t eat breakfast because it’s so heavy and it makes me feel tired, but this made me feel energized and ready for the day especially since I paired it with freshly made matcha for a drink. Thank you so much Rie, since I’m a paramedic, having something nutritious and quick that won’t slow us down that I can quickly cook in the morning for everyone on shift is really helpful.
I love Japanese breakfast! FYI, if you don't have a tamagoyaki pan it's not too hard to make an omelette in a round frying pan. You can just "fold" the edges of the layers into a square before you roll them.
@@oldskooljules i just roll mine in a small round pan that you would use for frying eggs. I shape it once it’s cooled down with plastic wrap anyway so no one notices the difference (and my husband really likes it!)

I studied abroad in Japan for a semester and my host grandmother made Japanese breakfast almost every day. 🥺 I loved it so much when I went back to the states, I wanted only Japanese breakfast for my morning meal. I love western breakfast and brunch still on weekends, but I mostly eat Japanese breakfast and Turkish breakfast as both are light and refreshing (and both still have egg components!).
Pregnant with my 4th baby and, whilst we've always tried to have a small amount of dishes from all over (Japanese being our favourite!), I have extreme food aversions to everything except home-made ramen, tofu and plain rice. Hoping I can find some more dishes I can add into what I can eat by checking videos like these. Thank you for sharing!
This is the first video I have watched and I loved it - you're very informative and entertaining. BTW, even though I'm not Japanese, I love natto. We have a Japanese guy in Sydney who makes natto. It's always sold fresh and never frozen and is therefore much fresher than the imported stuff. It doesn't come with the mustard and sauce and a Japanese girl told me to mix it with 1 tsp shoyu, 1 tsp mirin, 1 tsp brown rice vinegar and half tsp pure maple syrup. It's seriously delicious.
Midnight Diner got me so into hot rice butter and soy sauce. So I had that 2 days in a row i ate Japanese style breakfast with natto, 1 egg and small instant miso soup. It's like the natto is like the meat instead of bacon😅. Next ill try this tamagoyaki or salmon. Thanks for sharing miso from scratch recipe❤❤❤

The thing with Japanese breakfast that puts me off trying to make it is that each component isn't technically difficult but they're all relatively time-consuming. How long from start to finish does it take to make a spread like this? What time would I have to start cooking if I wanted breakfast at 7am lol?
Yeah I was seeing myself with a lot of prepackaged/prepped options like instant miso, reheating rice from the fridge, air frying the salmon to save time and likely buying prepackaged veggie sides lol
In Japan, it can be done in like 15 minutes because the kitchen and the utensils are all made for cooking food like this. You have a rice cooker that you can time so the rice is ready at your desired time, you have a built-in gas-heated grill under your gas stove, you have a special frying pan to male the egg omlette etc. The natto and pickles are something you always have in the fridge so you just take them out in the morning to eat. You only have to extract the stock for miso soup for a few minutes using a ready-made packet of ground dried kelp and bonito flakes so the soup is also quick to make. Making pancakes and fried eggs is much more time consuming.
I'm all down for miso soup for breakfast! Miso is one of my favorite foods, it's such a comfort food for me. I feel significantly better when I eat it. I love just sipping on the broth too.
I just tried natto for the first time and I’m pleasantly surprised how good it is! I’m going to get salmon tomorrow and try to make this for lunch. Thanks for sharing!

I am living in Okinawa and now prefer Japanese breakfast over American breakfast. I don’t cook fish very well but I do eat rolled omelette, miso, natto, tofu or abrage ,and vegetables like gobo, bitter melon, or pickled vegetables
It reminds me a lot of the breakfast we eat in Norway. We tend to eat salmon, but instead of rice we have sour dough bread, and in my household we often ate soup from the dinner before. I lived in Japan and enjoy both, but something about fork mashed avocados on sour dough bread with smoked salmon and scrambled eggs is hard to beat.

I’ve never been able to eat breakfast without getting a really bad stomachache because Western breakfast is so heavy or greasy, and I’ve tried everything I can in my twenty four years so far. I’m going to try some Eastern breakfasts and hopefully not be doubled over with a stomachache 😂
I do find it kind of crazy that we don't have a small oven option in the US. I learned about the fish grill while watching other videos on asian cooking and honestly that would make cooking SO much faster!

For anyone wondering, you don't really need to cut Tofu on your hand. It's just an old and stubborn Japanese way of doing things. Just use your cutting board. It won't break apart if you don"t put much pressure and your hand is safe
oh my god. karamucho, love that potato chips. because im from malaysia and most of the potato chips have hot and spicy flavour and karamucho has the same flavour with the potato chips back at home. i think during 4 years study in japan, i ate karamucho a lot as comfort food.
