You're absolutely right stephanie. Been making your cheesecake recipes for years. Both 9in and cupcake sizes. I also have the same thought as you. Also, though yes a little more work arranging the liners, scooping and spreading per cup but pondering about it, it's still faster to make. Cooling the 9in cheesecake takes hella time around 4 hours or just leave it overnight, while cups takes around 30 to an hour haha. That being said I still have made the 9in ones more times than I can count hahaha. I like making my life difficult like that lol. The waiting game is excruciating especially when your excited to eat it lol. Thank you for sharing your recipes! Forever grateful!
For those who make this, which is delicious and easy. Invest in a mini cheesecake pan. I use Chicago metalic in my Bakery. They come out more professional vs family style of your needing that.
