    one of the things I noticed is that in the end, the laminating butter has incorporated into the dough more than used to keep those layers apart during the baking. I would suggest you ensure the dough and l.butter are at the same temp (around 16-18c is always workable)... during your laminating process. Also, when letting them rise before the bake, ensure they have the jiggle or they are not ready to go.

    Must have a go at making croissants yours look amazing. Nothing like having a freshly baked croissant with butter in the morning yummy. Thanks for the recipe.

    Well, nothing wrong with small croissants - means you can eat more of them :P Bought the course a couple months ago and have yet to give it a try!

    If you want to make them smaller, I guess I would just want to make sure I proof them properly.
