A couple of days ago, I happened upon the transcript of the recipe that I had noted down in a little recipe notebook--4 PAGES!--and worked from that time, and chuckled thinking about when I'd have the time to watch the video again and make these . . . and here you are, reminding me how much I loved the results. And also how much I respected you for filming this while dealing with a chronic health issue in your arms; I shouldn't be a sook about doing this. Thanks for posting : )
I made these! They were amazing! At first glance it looks complicated, but it really isn't. It takes some planning though. Mix the dough on any night of the week after dinner, do the laminations on Friday night, (or spread it over several nights). Then you have a dough ready for Saturday morning to shape, proof and bake ❤❤❤

Oh, to watch this has been like a kind of baking meditation, thank you 🤗 In Germany we have a savory version that is like a crossing between Croissant and Brezel (called "Laugencroissant") and it's absolutely delicious ... maybe I will find the courage to try recreating this...sometimes!
made these in these past few days and they came out amazing. if you live in italy buy the Gioia brand of margarine, it works extremely well. the pain au chocolat came out much fluffier and also puffed up more than the croissants for some reason, but everything came out so good and the lamination was perfect!!!

I just had the idea of mixing multiple tofu bases together to make a complex protein and also using wheat protein. Shread the wheat protein and press with the tofu and it seems like it would be an interesting meat substitute

Amazing recipe! Better than any others I've tried! If you're looking for something else to test, I'd love to make danishes but know that danish dough contains egg. I've heard you can make danishes with croissant dough, but that danish dough is more sturdy which is important for adding filling. I might try a recipe and replace eggs with Just Egg. Have you ever tried this? Thanks again for so much awesome content!

Would you ever do a keto recipe? I made vegan keto croissants using a non-vegan recipe and they came out good! But I know one made by you would be top-tier.
have you tried freezing the buttere and then shredding the buttr and then sprinkling over th dough....I used to do this when I did it with reg butter when I could!!! lol easier to do and seems to work better....I also do this with biscuits......... strange things ya do to make th stress ease.
They look so yummy but I know I don't have the patience to make them. Luckily my usual grocery shop has empty vegan croissants and I can fill them with whatever I want. They are delicious 😊

haha i tried before and it turned into something resembling deli meat rather than croissants. Never say never though
