  • Recipe and instructions
    360g warm filtered water
    500g strong white bread flour
    12g salt
    125g active starter
    07:00 Feed the starter
    10:00 Make the dough
    10:30 Leave to rest for 1 hour
    11:30 1st stretch and folds or coil folds
    12:00 2nd stretch and folds or coil folds
    12:30 3rd stretch and folds or coil folds
    13:00 4th stretch and folds or coil folds
    13:00 Leave and cover on the side for bulk fermentation
    15:30 Laminate and shape and leave to rest for 20 minutes
    16:00 Laminate, reshape and put in fridge
    17:00 Preheat oven and Dutch oven
    17:30 Put dough in freezer
    18:00 Put in oven at 245c for 20 mins with lid on
    18:20 Reduce heat to 200c for 20 mins with lid off
    19:30 Cut and enjoy
