Hey Lily, thank you so much for doing this video. I went through a similar thing a few weeks back. I was doing a trial in a commercial kitchen to see how I would go making my bagels in a proper set up. I went in with a goal of making 100. It was such a long day, and nearly half of my bagels didn't end up well because they became over proofed and the ovens kept shutting off. I felt so defeated, I had thought I was ready to start making on a large scale but it was a disaster. My husband said that I should focus on it being a learning experience, and I in fact did achieve my goal of 100 bagels (even though most of them were crap 😅). I need to remember that achieving your dream was never meant to be easy.

One time I had made 30 loaves of sourdough bread, and went to a craft fair and sold 4 of them. It was one of those craft fairs, mostly for children so I will never do one of those again.

I know what you're feeling except not with baked goods but with my books. It seems like such a waste when I write a good book and it doesn't sell. I have thrown books out, so to speak, because they don't sell and I literally cry every time I do. You're forgiven about the language. Naughty words slip out in times of frustration.
Dear Lily, I have been following you since you started the channel, in those hard times of the pandemic, I am proud and amazed at how much you have grown. It fills my heart. I have a small bakery in Buenos Aires, Argentina and times have been hard for us on this side of the world but I loved what you said near the end of the video, the beauty of small businesses is how we can be flexible and adapt and so on. Thank you for being an inspiration and for showing the reality of a small food business. Hug!
Hey Lily, don't get too disheartened, you're absolutely spot on, use it all as a learning experience! I've been there myself and know how deflating it can be, but the highs always outweigh the lows when its your own business! This weekend was a really hard one to gauge, I currently work as a bakery manager for one of the 'big 4 supermarkets' whilst I look at setting up a micro bakery down here in Devon (your videos have been a big inspiration for that!) and even our usual trade pattern went completely out of the window on Saturday and Sunday....Keep up the amazing work!

How many days per week are you baking?
2 prep days, 2 -3 bake days a week and farmers markets once to twice a month on the weekend too :)
