I feel and said the same about SAMS & COSTCO meat. Past few months, we've been getting the thick NYS from Costco, heavy salt over night in the fridge, then cooking them just like you just did. Been excellent steaks. Those looked about perfect. YUM

Nick have you tried doing a reverse sear and cooking in the oven low and slow? We’ve don’t them at 250 till they hit med rare temp then pan searing them in a really hot pan with butter... OMG it melts in your mouth
Nick yea it is, gonna have to try it with Kosmo’s seasonings.. we usually use Montreal steak seasoning.. but haven’t gotten any cap steaks since we started using Kosmo’s

In competition do you use this same method? Do you wait for any amount of time before going back over with your second rubs? Well me and my friend Artie followed the recipe to the tee. Well we cooked For our friends. Well we nailed the competition. It came out superb. Half loved the makers and the other half loved the jack. Thanks for the video and the recipe.
My local costco sells prime brisket constantly. They occasionally sell prime boneless ribeye, and once a season they sell full bone in ribeye sections which are sometimes prime and sometimes choice. I usually buy a $160 choice ribeye section and cut my own steaks. Generally tender but there's alot of silver skin and fat to remove.

why would you not buy the whole sub primal from both and cut your own steaks? that is all I do with Costco because the blade tenderize and do not wet age them at all. Nice KJ...
The Costco here started separating the prime ribeye about a year and half ago. If I called a couple days before, they'd save me a pack of prime prior to separating them. After a while, I found that a lot of the choice steaks actually had better color and marbling than the prime cuts that they sell. Most of the time, I just buy a whole rib roast and cut my own steaks now.
@@ThatDaveGuy77 thanks for responding, my point was the cap steak being rolled... This puts the exterior (and potential bacteria) on the interior of the steak. At medium rare temperatures, these bacteria will not be killed. Just food for thought.

Nor Cal costco shopper. Costco sells prime cap and prime eye. They also sell the full ribeye in a short tomahawk. They have the full rib roast in both prime and choice which is the way I buy my steaks from them. Buy the full roast. Slice my own steaks in varying sizes then food saver them for the freezer.
Ya, it’s a regional thing for what they carry as far as cuts. My local Costco’s in my town in central California carry Harris Beef. Don’t know if it’s the best, but it’s darn good. The “prime” anything is hit and miss though. I always buy prime but sometimes I have to settle on cuts. Without a doubt, the “cap” prime cut is hands down the best they carry....if you can be lucky enough to get some.

I shop both warehouses and if you get there early Sam’s frequently marks down their prime steaks 20% when they are going out of date. That on top of the already cheaper daily price makes SAMs the winner for me. Delicious

Slice them how you like and serve immediately.
I actually only have Sam's where I live. Costco is nowhere within a reasonable driving distance for me. However, Sam's still has prime meat where I live and it is pretty good.
You need to grab the Costco manager. All stores have flexibility in their zones to carry different products. In SoCal, we have all the prime ribeyes, rib roasts, caps and the like. Hell they have prime briskets and choice ones. The meat guy is jerking your chain. I wonder if he is really the boss.
I've noticed that steak quality and selection varies between Costco's. I'll drive across town to the other one when the whole ribeye selection is weak at the one near me, and I'll often find well-marbled Choice that is so close to Prime that you wouldn't be able to tell the difference.
Costco has an issue though. All steaks, even prime are blade tenderized. It is listed right on the label and recommends cooking to 165! The FDA requires this label since bacteria could be introduced by the tenderizing process. I am sure the bacteria issue is really small, but just be aware since none of us are going to cook our prime ribeye to 165....

Hi TexasOutlawBBQ. Really more of a personal preference. Some people layer rubs, some mix rubs. Lots of ways to do it

Michael Norton they cut the cap off the rib roast at costco and trim the fat etc.. also when they cut the cap off they butterfly it then roll it..

Our Costco in Anchorage Alaska has whole prime ribeye. Costco is a great place to buy steaks up here for the money. Alaska prices can be rough.
