Muhammara: Roasted Red Pepper & Walnut Dip/Spread | A Syrian Vegan Dish

  • Here is one of the Syrian recipes that I fell in love with and I had to share its deliciousness with the world! If you try it, please let me know how you find it too! I love to hear your comments and suggestions! It makes my days! Now enough about me and let’s talk about this recipe:
    Ingredients
    1/2 cup raw walnuts
    1/4 cup bread crumps
    3/4 cup mild pepper paste (this is a shortcut ingredient and it can be substituted by a jar of roasted red bell peppers or two large red bell peppers, roasted and peeled)
    1/4 cup extra version olive oil
    1 tbsp fresh lemon juice (1/2 a lemon)
    1 clove of garlic (minced)
    2-3 tbsp tahini paste
    2 tbsp pomegranate molasses
    1 tsp ground cumin
    1 tsp paprika (not smoked paprika)
    A dash of salt (or salt to taste)
    For garnishing:
    Fresh mint leaves
    Walnuts (my husband added the walnuts 😂)
    A drizzle of extra version olive oil
    Important Notes:
    🌶 The mild pepper paste shortcut ingredient can be substituted by two large roasted red bell peppers (there are also ready-made jars of those).
    🌶 If you use the shortcut ingredient mild pepper paste, those jars already have salt, so add it to taste. I only added a dash of it.
    🌶 You can make it spicier by adding some cayenne and, if you have available, Aleppo red pepper flakes.
    🌶 You can eat this as a spread with barbecued red and chicken meat. Also, it can be used as a vegan dip, or it can even be eaten straight on pita bread!
    🌶 You can find the mild pepper paste, the tahini paste and the pomegranate molasses in any middle eastern or arabic grocery stores!

    Just did it. My first muhammara! Not the last one! With fresh chargrilled peppers, self-made pomegranate molasses. Delicious --- just tasted a bit, letting the flavours mix overnight. Thank you!

      @@nourcookslebanese523 I had the same brand of pepper paste as yours , I used that one.Everyone loved it.I use to make it long time ago. My daughter sent me the name of that dip (hint hint )for me to make it. I will check your website to see what else can I can make. Thank you again.

    I do not get it why so many recipes used bread crumbs while the original recipe calls for Bulgur. Recently some people started using quinoa for those who can not tolerate gluten. By the way we always highly recommended soaking the walnuts overnight before using them in this recipe.

    Thank you for sharing. I can't wait to make this recipe looks absolutely delicious. I was just wondering is there any way I could substitute the pomegranate molasses with something else, just a little difficult to find. Thx

      Unfortunately, it is hard to find a substituent for that. Yet, you can definitely skip it. On a side note, you can find Pom molasses at any middle eastern or Eastern European store.

      it won't be the same of course, but you can get a similar taste profile by adding some honey with lemon juice or cranberry juice (the 100% one not the juice cocktail) , just watch the amount of liquid you're adding since you don't want it to come out too thin. cheers

      I would just skip it or I heard some people use quinoa or bulgar but I assume you should cook them first before adding...honestly you can just skip it :)

    Hello!! Can i use pomegranate balsamic reduction instead of molases? I cant find it in my country xxx

      You can skip this ingredient though and replace it with fresh pomegranate seeds for garnishing the top of the plate

    Traditionally you'd also want to grate in 1 small onion. Trustme the onion make a big difference in flavor and sonsistancy.

      They eat it was a spread with Barbecued meat mostly and as an appetizer!

      🌶 O ingrediente atalho da pasta de pimenta suave pode ser substituído por dois grandes pimentões vermelhos assados (também existem potes prontos).
      🌶 Se você usar o ingrediente atalho pasta de pimenta suave, esses potes já têm sal, então adicione a gosto. Eu só adicionei uma pitada dele.
      🌶 Você pode torná-lo mais picante adicionando um pouco de pimenta caiena e, se tiver disponível, flocos de pimenta vermelha Aleppo.
      🌶 Você pode comê-lo como uma pasta com carne vermelha grelhada e frango. Além disso, pode ser usado como um molho vegano ou até mesmo comido direto no pão pita!
      🌶 Você pode encontrar a pasta suave de pimenta, a pasta de tahine e o melaço de romã em qualquer mercearia do Oriente Médio ou árabe!

      You can skip adding them:) also you can toast some old bread and process them and voila you have gotten homemade bread crumbs😃

    You are using a teflon pan and they can become toxic and release toxic substances when overheated, I have read. There are so many good pans granite coated, ceramic coated stainless steel.....
