Chetna, my Lebanese mother made a flat bread topped with a mix of ground raw red peppers, walnuts, sesame seeds, and olive oil and spices. She ran it all through a meat grinder (no blender or food processor). The dough was the same dough she made pita bread from. Your many flat breads would probably be delicious with this spread on top and baked. I make her recipe, but might try this with the roasted peppers.

@@FoodwithChetna Hmm. There is no written recipe, so I'll have to pay attention to quantities the next time I make it. It is one of the things she made (and my absolute favorite) that I've had a hard time replicating. Mine are good, but not quite as good as hers. She was born in Lebanon (I'm first generation), so I have searched high and low for an authentic recipe, to no avail. No close relatives or her sisters made it. They all made classic Man'oushe (maybe you're familiar with it) flat bread with Za'atar, but not her red pepper one. So I'm thinking she might have made it up, maybe using the classic dip as inspiration. Maybe it was her meat grinder, which I have. I don't know, but mine have never come out as good as hers. It is one recipe l wish I had gotten from her. I'll save this video, and come back with a recipe as best I can. Of course her dough may have had something to do with it. This might force me to nail the recipe down, better than I have.
@@virginiaf.5764 the one I eat at my favourite Lebanese restaurant is more red in colour and is my favourite thing to eat there. The owner is a first generation Canadian and it is his mother's recipe. I love all iterations of this dip which I've eaten in different countries.
I'll definitely try Chetna's recipe during the holidays.
@@leadoucet1432 Maybe the restaurant would share the recipe. Or at least parts of it. Like are the peppers roasted first? It can't hurt to ask. I'm surprised there's a restaurant that serves something similar. Could be a regional thing.
That's interesting I don't thing of walnuts as a Middle Eastern ingredient, but they're my favourite nuts.

I too am a fanboy for Muhammara, having first discovered it some years back while i was in Izmir Turkey, i also found you could buy it here in London, an acceptable commercial product, but not quite the same. Not content with just eating the ready made version, i made my own from a source on the internet... it was OK, but not the same as id had before (or even close) so i am quite keen to try yours and see how it stacks up.
