21:00 charqui (i guess it's related to jerky) is traditionally made out of horse. It's a cowboy food, someone herding their animals, will take them to pastures in the mountains, and have a bag of charqui with it. You can stew it, or eat them as it is. It's very expensive because it loses all of the water. When i had a friend who worked in the country side, he would bring us a huge bag of charqui. You eat that while watching a movie, and you can chug a 2lt bottle of coca cola easily. It's not for everyone, but it's very typical.

2:40 I always used chorizo as an additive to beef or better yet pork. chorizo alone is pretty sloppy and spicy to just put on top of rice or a sandwitch.
