    You know what I love about a good breakfast hash? Meat! We've got a hearty breakfast hash recipe that is sure to stick to your ribs. Hope y'all enjoy!
    Three Meat Cowboy Breakfast Hash
    4 Slices thick cut bacon, chopped
    1 cup diced ham
    1 poblano pepper, diced
    4 ounces chorizo
    ½ diced yellow onion
    1 garlic clove, minced
    ¼ - 1/3 cup canola oil or fy oil
    3 medium red potatoes, chopped
    1 tablespoon butter
    2 - 4 eggs
    Chopped green onion and/or shredded cheese for serving (optional)
    -In a medium cast iron skillet, begin browning the bacon. As it browns, stir in the ham. When the ham begins to brown stir in the Poblano and cook for about 2 minutes, stirring occasionally. Set aside.
    - In a large cast iron skillet, add the chorizo and cook over medium-high heat. As the meat begins to brown, stir in the onion and garlic. Continue cooking until the meat as browned and onions are tender, stirring occasionally.
    -Add the chorizo mixture to the bacon skillet. Return to the empty skillet and add the fry oil. Heat over medium-high heat. Stir in the potatoes and cook until golden brown and tender, stirring occasionally. Drain any excess grease, if needed.
    -Add the meat mixture to the larger potato skillet. Return to the empty skillet, clean if needed (so the eggs don't stick).
    -Melt the butter over medium heat. Add the eggs and cook over-easy.
    -Place the eggs on top of the hash skillet. Top with green onions or cheese, if desired. Serve immediately.

    I got my best friend, who is a professional chef, hooked on your channel. We went camping with my sons in April and he made your 3-meat hash and we were all just blown away by how delicious it was! I am a big eater and I was so content I skipped lunch! And that is a rarity, sir. This ranks as one of the finest breakfast dishes I’ve ever had.

      Sorta like "Leftover Bacon", it's been talked about, but nobody has ever seen any.
      I like a good over easy cackleberry, but a sort of poached or steamed will work too. Important thing is that the runny yolk runs into that mess of tater & chorizo & bacon & ham. Good eatin' Kent

    I do a hash, one egg, one potato, one sausage link per person. I top each bowl with cheese and a dollop of sour cream and picante salsa. my boys love it and keeps you moving till supper time.

    In sweden we call that pytt i panna, in the 50s and 60s it was very common on mondays in the average workers home. Made with the leftovers from the sunday-roast. I always have like a 2 liters plastic container in the freezer were i put leftover meats to be able to make 3 meat hash or pytt i panna, just need to add potatoes and onions. Here in sweden we serve it with fried eggs and sliced and pickled beetroot

    Very nice. I think I'll make enough to wrap into 5 flour tortillas for next weeks breakfasts at work.
    For extra points, I'll press those "burritos" on the panini press maker thingy to crisp up the bread and seal everything into a single unit, one fisted, zero utensil type belly stuffing unit.

    Thanks Kent! Most of my cooking skills were learned and refined cooking at fish camp for 20 hungry guys. Been doing this with my father since i was only 12. 21 years later we've made just about every breakfast in a skillet you can imagine. I'm gonna try and tweak this recipe to feed about 15!

    This is the breakfast I cook for my camp before floating the river in Noel. Slight modifications but always a good meal before a day on the river. Gonna have to try this recipe this summer. Thanks Kent! From one okie to another.

    Made this for dinner tonight and the wife was impressed. Hearty, tasty and filling. I put a lid on the skillet when frying potatoes. They steam a bit and are soft on the inside and crunchy on the outside, perfect fried potatoes every time. Made for a nice dinner on a cold winter evening. This passed the smiling wife test and if Mom, is happy everyone is happy. Thank you for sharing.
