  • We've had a lot of request for a classic southern fried chicken recipe. We're showing you how to get a homemade- from scratch- fried chicken recipe start to finish!

    Classic Fried Chicken Recipe
    3.5 - 4 lb. whole chicken
    2 1/4 cups butternilk
    1 tablespoon baking powder
    2 1/4 cups all-purpose flour
    ⅓ cup cornstarch
    2 ½ tablespoons Red River Ranch Original Seasoning (kentrollins.com) or seasoned salt/favorite all-purpose seasoning
    2 tablespoons ground black pepper
    1 tablespoon poultry seasoning
    1 tablespoon onion powder
    1 tablespoon garlic powder
    1 teaspoon cayenne pepper (optional)
    2 teaspoons smoked paprika
    1 teaspoon celery salt
    2 teaspoons white pepper
    Fry oil
    -Cut the chicken up (as shown in video).
    -In a large pan pour in the buttermilk and whisk in the baking powder. Add the chicken pieces and turn to generously coat. Cover and chill for at least one hour.
    -Remove the chicken from the icebox about 30 minutes before frying and flip each piece over.
    -Meanwhile, in a bowl combine the remaining spices.
    -Add about 1 1/2 cups of the flour mixture into a plastic bag. Using a pair of tongs, remove a piece of chicken from the buttermilk and allow any excess buttermilk to drip off. Place the chicken in the bag and toss to generously coat. Place on a wire rack. Repeat with the remaining chicken, adding more flour mixture to the bag, as needed.
    -Let the chicken set about 10 minutes before frying.
    -Pour about 1-inch deep of oil into a cast iron skillet or Dutch oven (enough for the oil to reach about halfway up the chicken). Heat to 340-350 degrees F. over medium-high heat.
    -Add the chicken to the skillet and cover with a lid. Cook for about 5 to 8 minutes or until a light golden brown. Remove the lid and flip each piece. Continue cooking (with no lid) an additional 5 - 7 minutes, rotating as needed, until golden brown and the internal temperature is 165 degrees. F.
    -Allow to cool slightly on a wire rack. Serve warm.

    My grandmother used to make this for Sunday supper! Mashed potatoes, gravy, pot of beans and homemade biscuits! I miss her cooking!

    You can't beat a classic. Southern Fried Chicken is just the best and i was surprised to find recipes from 1823 that i saw on the Townsend 18th Century Cooking. They even had Onion Rings in batter in the 18th Century. Goes to show that great comfort food is here to stay. Great job Kent and Co. Now enjoy. Cheers Moose.

    Man that looks so good. Reminds me of a restaurant in Tulsa called the Golden Drumstick, closed long ago. That was their specialty, and they pushed the idea of putting honey on your fried chicken. They brought homemade honey to the table and gave you cloth napkins and a dish of warm water to clean your hands with. To this day I love fried chicken with honey on it, and a little Louisiana hot sauce on a bite now and then. The hot, sweet, and acidic vinegar flavors really makes fried chicken good.

      My grandmother wouldn't know what to do with one. Best fried chicken, eggs, crab cakes, oysters, fried crabs, fish, gizzards, pork and lamb chops, even chitlins. She'd even fry me a steak when I asked.

    My grandpa would fight you for the fried back. If it did not make in into the frying pan there was hell to pay. My grandma used the back to cover the liver while it fried, since it popped and splashed out grease while it cooked. Thanks Kent.

    My mother made chicken pretty much this way. It was right some good. She fried up a big batch for picnics and we’d have it cold along with her potato salad, and a tuna fish salad along with some other fixin’s and of course there was always a homemade cake or pie for dessert.

    Oh my goodness no Kent. Fry those backs and ribs. Delicious. My two favorite pieces 👍😁 because I eat fried chicken for the crust mostly. I don't like a bunch of meat on my piece. Give me the back, ribs, wings and a couple of bread and butter sandwiches and I'm in hog heaven. LoL 😁

    When I was growing up, my Mom always tried to make fried chicken as good as my Grandmother. Using the same recipe and copying everything she did, except for the cast iron pan my Grandmother used. It made all the difference. I have it today and only fry with it. Thanks for your video.

    Hi Kent: Love your skills just one thing as a health coach please stay away from canola, corn and any GMO cooking oils. Use lard, tallow for health. Nut oils are good but expensive also coconut is very good. For sure I will be doing some of your recipes.

    I often use a large paper bag for the flouring cycle.
    I have even froze that bag and flour mix with spices for later use.

    I've been following your channel for about a month now and it's my favorite. I have always had a problem with fried chicken. You know, burnt on the outside and raw in the middle. I cooked it in my 10 inch dutch oven about 8 minutes each side and that was the best that I have ever made. I'm going to make the shepards pie and chicken and dumplings next. Two thumbs up. 👍👍

    I start mine with a rub of pepper, salt, paprika and cayenne. Then into a bath of buttermilk and Frank’s hot sauce for three plus hours. The rest is the same as you do but I fry in peanut oil unless someone is allergic. I think only one out of a hundred people still fry their own chicken these days.

      I have a lodge cast iron chicken fryer, I love the deep pan for frying, as I hate the clean up of frying chicken. I love your recipes and look forward to you and Shannon's posts.

      Yes, sadly that seems the case. The younger generation wouldn't have the first clue as how to dress one out freshly put to sleep I betcha.

    Let’s eat!!! LOL Whaaaaa Shan you ain’t cut up no chicken? LOL It’s ok...we still love ya! It’s the only way I’ll buy chicken anymore. Whole and cut it up myself. Too expensive the other ways. I’ll occasionally buy some extra breasts if I catch them .99 cents a pound. Which ain’t often but maybe once a year. Then I buy big bulk packs and freeze them individually for extras for company or chicken salad or whatever.

    I love your tips, like the lid and the idea of covering the surfaces nearby to avoid splatter. Smart, practical additions to the usual fried-chicken tutorials. Bravo.

    Wow, thank you so much. You brought back fond memories of my Grandmother Hollis, from Oklahoma. She'd grab two large skellets, and I knew it was chicken finger lickin' dinner night. I don't know what all she seasoned it with, but it was the best I ever did eat. She always used lard and later in years it was Crisco. Man do I miss her. Wish I could come visit with you all.     LOL. I'm retired and a school crossing guard. So, I was standing on my corner this morning thinking what can I cook tonight. And what do I say to myself? I say, "Self. What can I call tonight's dish?" Yep....I came up with classic fried chicken and I hadn't seen your video yet. Now I gots to come up with another name. Too funny! Good video y'all.

    Looks good Kent... when shallow frying chicken a lid is very necessary. I must say when cooking chicken this way I do prefer it to soak in buttermilk rather then a brine... Thanks for the video : )
