I made half a batch into donut holes, but I forgot the sour cream! 😄 They were still great, crispy outside, tender inside. I think with much less sweetener and added green onion, they would be wonderful hush puppies. Your recipes always end up being used in multiple ways at my house! My favorite donut is a Sour Cream Glazed Donut. And the darker color on these is exactly how i prefer my Donut. *I finally tried this recipe, and we really liked them. Thanks for the refined Coconut Oil tip. For as often as i make a donut, it was worth it.

I was craving a different kind of light fried donut the other day. Then I watched the Ketoserts channel making keto cream puffs and I wondered about using the choux for donuts. Found out those are called French Crullers which I used to love in my non keto days. Just made them and they were really delicious). But, I'd love to see what you would do. How would you make your keto choux? How to get them to puff up more making French crullers--mine were a bit flat but still good. Seems like there are a lot of possibilities using a keto choux. Anyway, just a thought/request from a fan!
The deep mahogany color of these reminded me of corn dogs! I lurve homemade, or real corn dogs - not those nasty frozen store bought. I’m now gonna use parts of this to come up with a good corn dog recipe! Its really not, thats why I feel like its the first sustainable lifestyle change I can stick with! I can have delicious desserts still instead of the crappy low fat, 90 calorie cookies and brownies that taste like cardboard.
Lorann makes a pretty good blueberry baking emulsion, if you don't wanna go the fresh blueberry route. It will tint your batter blue though. I usually dehydrate blueberries for use in recipes.

I wonder if vodka will help that dry out faster... I know a little can help keep pie dough from getting tough. (Yes, my pie doughs sucked that bad)

I would just add some fresh blueberries to the batter.
