OK, so I have a request for you to work on if you think you could do it. Do you think you could come up with a low carb boba tea or at least the boba pearls and the sugar "sauce"? I've seen a couple "keto boba tea" substitutes, KetoFocus teamed up with ChocZero and made one with their syrup, oil and gelatin...I'm sorry but that sounds disgusting and nothing like boba. A couple channels, Healthy Ambitions is one, used the viral noodle technique with the sodium alginate and calcium lactate. I've made the noodles so I know the consistency that turns out to be and that's still not boba. Boba has that chew to it from the tapioca. I don't know, I'm not a very good cook much less a chef but I thought maybe if you used like oat fiber and coconut flour or something like that maybe? Maybe started with stuff like that for the pearls and brown sugar Swerve for the signature sauce that usually comes in boba tea. You'd truly be like a GOD in my book if you could figure it out! Just a suggestion. Hopes and fingers 🤞 crossed you can because to have that as a treat every now in then without having to consume enough carbs for entire year would be HEAVEN! Love your channel! Freeze the filing before it goes in the oven, that way it takes longer to boil. Also, small hole or two on the top to prevent blowing out the sides. Excellent keto recipe!
I took you at your word that the possibilities for this pastry were endless and made Scottish-style savory beef and mushroom pies in 4” spring form pans. Gluten free keto dough can be fussy and fragile to work with. I was gifted a dough press kit and it was a game changer. Mine are plastic, round and hinged in the middle. I've seen square and rectangle shapes for sale online. They're quite inexpensive, can be made of plastic or metal, and come in a wide array of sizes too. They've saved me a lot of time and frustration. As you fold over the dough and press them closed, the pressure seems to be more evenly distributed and their fluted edges makes an attractive, tight and tidy seal. I've found that because they're the same uniform size, they cook more evenly too. The molds can be used for fruit filled tarts, Asian dumplings, ravioli, pierogi, hand pies, Cornish pasties, empanadas...you name it.

NOT crescent shaped bread, actual Flakey, Fluffy, butter filled layered croissants that have huge air pockets inside. I even bought the Hero croissants once; they are good, but I can't really afford to pay $6 a piece for croissants when Kroger has a box of 4 for $5. I know I shouldn't but they are such a nice treat. I am so afraid to try another "bread" recipe because I've had to throw away so many ingredient fails. How would it work since croissants have yeast but this is processed cold?
Was watching someone make Lamingtons a couple of days ago and thought that's something I could do on Keto if only there was a low-carb puff pastry recipe. And here you are! It's sure to be an adventure with my limited skills, but I'm going to try.
Oh My God, SO LEGIT! I just made this today, and I was pretty skeptical about how it was gonna taste because TOO many have tasted like cardboard (you all know what I'm talking about). Not sure if it was gonna be flaky or not, but I'm happy to say it's FORREAL! I can't post a pic of how it turned out (let me know where I can post, if there is a place!), definitely not as pretty as hers, but it didn't disappoint in taste or texture. Mine was crispy on the outside, soft on the inside. I didn't do the white frosting part as the one I made was too runny, no matter how much I put in the powdered allulose (instead of monkfruit). I used Choczero's strawberry syrup, and that really worked! I followed everything else pretty much the same, other than two tsp of Lupin flour to top off the 1/4 coconut flour measurement (as she said you don't need a full 1/4 cup, but I still topped it). THANK YOU THANK YOU! I'm now a HUGE fan!!

I just recently discovered your channel and I love it! I'm not a trained cook, but I have loved baking since I made my first scone when I was 8. I'm really excited to try this recipe as I have been craving a vanilla slice for a while. Since I live in Australia, some of the ingredients are a little hard to get as the Keto diet is popular, but we don't have the population amount that America does. Thanks! You can make croissants out of this but you need to roll it much thicker. I have a live video where I made the chocolate croissants. Just did rolled rectangles with the chocolate in the middle and they turned out really good.

I don't watch many at all, mainly serious keto, and highfalutin low carb cause they measure and do things right most of the time. So I got lazy and didn't feel like folding and waiting. So I rolled my dough out one time, dusted each side with oat fiber, sliced it in 6 sections, stacked them on top of each other and then rolled again 🤣 hope it works. I also used vanilla protein because that's all I had. I'm using it as a pie crust. Fingers crossed 😅

It's up to you how big you want the croissants to be, you can make them any size. The pot pie I don't remember if I said how long it was in the oven but I cooked it until it was puffed and golden brown on top. Sorry I can't be of more help. You're Welcome.
I buy gloves from Costco that I use in the kitchen when handling meat or pie dough. I can't recall if they are latex or some other material, but they are like latex. Anyway, I find that the gloves prevent the heat from my hands from warning up my pie dough. They also help keep junk out of my finger nails.
If you are making other recipes you should be putting all the ingredients into a counter of some kind. I like carb manager app for counting. The only thing in the puff pastry that has carbs is the coconut flour. Mine had 8 carbs for 30 g.
Oh wow! How clever are you! I tried making sausage rolls with fathead dough and it tasted okay but the texture was so wrong. I have everything to make this so I see sausage rolls version 2 in my future! I’m also subscribing and will binge watch all your videos coz I think you might just be a genius 😁

@@KetoUpgrade I used a coconut flour fathead recipe as I seem to be having issues with almonds so I’m not sure if that made the texture more wrong. It was far too bready for a sausage roll, and on a couple of them it melted and oozed and pooled at the bottom! 😂😂😂 Luckily they were just for me and I didn’t have to serve them to anyone. That would have been embarrassing! I’ll try the puff pastry after Christmas. I have some rather fancy schmancy flavoured sausage links in the freezer that deserve better than fathead! I suspect I might make an extra batch of pastry to keep in the freezer too. I have a teeny tiny kitchen here with about a square foot of counter space free, so to do it I’ll need to move a couple of appliances into the dining room, so I might as well make it worth the effort 😁
@@moniquem783 I actually prefer a coconut fat head dough, just better texture I think but some people find it too sweet for savory applications (I don't). Oh boy, I bet that's what happens if you don't get all the ingredients mixed up REALLY well, lol. I hope you enjoy the puff pastry when you finally get to making it. @@KetoUpgrade I’ve never had the almond flour version so I can’t compare, but it didn’t taste too sweet to me with the coconut flour. I’m pretty sure it was thoroughly mixed as I did it in my food processor. I have hand issues and I knew if I tried to do it with a spatula I’d be in pain long before it was properly mixed. That’s why I never made it last time I did keto. But I have a really good food processor now and thought surely that would work, so I searched and found a post about it! That post had the coconut flour recipe too. I did it in the order she said and it looked very thoroughly mixed. It was a bit warm that day though (I’m in Australia - it’s summer) and I’d already had the oven on for half an hour to par cook the sausage so the kitchen was bordering on hot, and the dough was really soft on the first couple and starting to droop by the time I’d finished the 6th one. I think I should have popped them in the fridge for a few minutes to firm up before baking. If I ever do anything with it again, I’ll try that. Something I’m really hoping you tackle at some point is a tortilla. Like a proper big 12” flour tortilla that you can wrap around an egg salad without it dropping out all over your hand. I tried the 90 second tortilla and it wasn’t very nice. From my research, nobody has really nailed a tortilla yet. I bet you can do it!
@@moniquem783 Ahh yeah I never tried to wrap something when it was super hot out, makes sense it would melt. I made pigs in a blanket once with coconut flour fathead dough but it wasn't too hot out and I didn't precook the hot dogs. I'd say chilling would definitely help. I would definitely keep the puff pastry cold as well for the sausage rolls otherwise the butter could leak out too much. I heard that the 90 second tortilla was great! I haven't tried it myself but I thought the need for a tortilla recipe had been fulfilled.

I've found that different brands of coconut flours have stronger coconut flavor. I use great value organic coconut flour and I can't really taste the coconut. But if you want a substitute you can try doing 3 times the amount of almond flour for the amount of coconut flour it calls for. I've never tested that though. You're Welcome.

When making similar pastries with jam, my mum places jam in an ice-cube tray and leaves it overnight in the freezer. Then when she rolls out her pastry she places a little ice-cube jam in them. Do you think it would work with your recipe? I really want to try to make your recipe, it looks heavenly.

I have yet to try to figure out keto filo dough but I do have a live stream where I made a kind of pan du chocolate, they were delicious!
Baklava is made using phyllo dough, not puff pastry.

Interesting recipe. Thanks for posting. They sell pocket pie molds that are similar to gyoza molds with hinges on one side. Seems like this might work in those.

I just recently discovered your channel and I love it! I'm not a trained cook, but I have loved baking since I made my first scone when I was 8. I'm really excited to try this recipe as I have been craving a vanilla slice for a while. Since I live in Australia, some of the ingredients are a little hard to get as the Keto diet is popular, but we don't have the population amount that America does. So I'm going to have to wait untill I get some oat fibre for this one! Many thanks.

Thanks! You can make croissants out of this but you need to roll it much thicker. I have a live video where I made the chocolate croissants. Just did rolled rectangles with the chocolate in the middle and they turned out really good.

I just want to say I just found your channel. We must be kindred spirits because I am obsessed with keto baking experiments too! I love that you bring so much experience and actually do things correct. Drives me crazy watching other you tube cooking channels, and I am saying no don't put that in now or what are they doing... I am currently trying to figure out sourdough bread with real starter. Many fails, but I'll keep trying.

I don't watch many at all, mainly serious keto, and highfalutin low carb cause they measure and do things right most of the time. Good luck on your sour dough, haven't tackled that yet, still working on a yeasted bread and pizza crust.

So I got lazy and didn't feel like folding and waiting. So I rolled my dough out one time, dusted each side with oat fiber, sliced it in 6 sections, stacked them on top of each other and then rolled again 🤣 hope it works. I also used vanilla protein because that's all I had. I'm using it as a pie crust. Fingers crossed 😅

If I'm not filming a recipe I just cook by instinct usually. The pot pie I don't remember if I said how long it was in the oven but I cooked it until it was puffed and golden brown on top. Sorry I can't be of more help.

I buy gloves from Costco that I use in the kitchen when handling meat or pie dough. I can't recall if they are latex or some other material, but they are like latex. Anyway, I find that the gloves prevent the heat from my hands from warning up my pie dough. They also help keep junk out of my finger nails.
Yeah I've heard that helps. My hands are always cold though, so I don't worry about it much. LOL
This looks sooo, good. I love your channel!! Can you list the macros for the Puff Pastry alone? I would like to use it in other recipes.
If you are making other recipes you should be putting all the ingredients into a counter of some kind. I like carb manager app for counting. The only thing in the puff pastry that has carbs is the coconut flour. Mine had 8 carbs for 30 g.

Oh wow! How clever are you! I tried making sausage rolls with fathead dough and it tasted okay but the texture was so wrong. I have everything to make this so I see sausage rolls version 2 in my future! I’m also subscribing and will binge watch all your videos coz I think you might just be a genius 😁

@@KetoUpgrade I used a coconut flour fathead recipe as I seem to be having issues with almonds so I’m not sure if that made the texture more wrong. It was far too bready for a sausage roll, and on a couple of them it melted and oozed and pooled at the bottom! 😂😂😂 Luckily they were just for me and I didn’t have to serve them to anyone. That would have been embarrassing! I’ll try the puff pastry after Christmas. I have some rather fancy schmancy flavoured sausage links in the freezer that deserve better than fathead! I suspect I might make an extra batch of pastry to keep in the freezer too. I have a teeny tiny kitchen here with about a square foot of counter space free, so to do it I’ll need to move a couple of appliances into the dining room, so I might as well make it worth the effort 😁
@@moniquem783 I actually prefer a coconut fat head dough, just better texture I think but some people find it too sweet for savory applications (I don't). Oh boy, I bet that's what happens if you don't get all the ingredients mixed up REALLY well, lol. I hope you enjoy the puff pastry when you finally get to making it. @@KetoUpgrade I’ve never had the almond flour version so I can’t compare, but it didn’t taste too sweet to me with the coconut flour. I’m pretty sure it was thoroughly mixed as I did it in my food processor. I have hand issues and I knew if I tried to do it with a spatula I’d be in pain long before it was properly mixed. That’s why I never made it last time I did keto. But I have a really good food processor now and thought surely that would work, so I searched and found a post about it! That post had the coconut flour recipe too. I did it in the order she said and it looked very thoroughly mixed. It was a bit warm that day though (I’m in Australia - it’s summer) and I’d already had the oven on for half an hour to par cook the sausage so the kitchen was bordering on hot, and the dough was really soft on the first couple and starting to droop by the time I’d finished the 6th one. I think I should have popped them in the fridge for a few minutes to firm up before baking. If I ever do anything with it again, I’ll try that.
Something I’m really hoping you tackle at some point is a tortilla. Like a proper big 12” flour tortilla that you can wrap around an egg salad without it dropping out all over your hand. I tried the 90 second tortilla and it wasn’t very nice. From my research, nobody has really nailed a tortilla yet. I bet you can do it!
@@moniquem783 Ahh yeah I never tried to wrap something when it was super hot out, makes sense it would melt. I made pigs in a blanket once with coconut flour fathead dough but it wasn't too hot out and I didn't precook the hot dogs. I'd say chilling would definitely help. I would definitely keep the puff pastry cold as well for the sausage rolls otherwise the butter could leak out too much.
I heard that the 90 second tortilla was great! I haven't tried it myself but I thought the need for a tortilla recipe had been fulfilled.

That looks like some great flaky crust for pastries and so forth. I always wondered if I could reverse-engineer the Panera breakfast souffles while still being low carb.
It is, I use it for all my pie recipes now. Have no idea. I never go to starbucks, lol.

I've found that different brands of coconut flours have stronger coconut flavor. I use great value organic coconut flour and I can't really taste the coconut. But if you want a substitute you can try doing 3 times the amount of almond flour for the amount of coconut flour it calls for. I've never tested that though. You're Welcome.

When making similar pastries with jam, my mum places jam in an ice-cube tray and leaves it overnight in the freezer. Then when she rolls out her pastry she places a little ice-cube jam in them. Do you think it would work with your recipe? I really want to try to make your recipe, it looks heavenly.

Thanks. It technically is but it isn't as good in that form. I made chocolate stuffed puff pastry dough in a live where I used it for pot pie crust also and I mentioned alternatives for this in that video.
