How to Make the BEST Deer Jerky | Venison Jerky Recipe using a Dehydrator

  • I tired out what was claimed to be the BEST Venison Jerky Recipe EVER! And my results were just that! I 100% agree with this claim from Josh at Josh and Hunter's Adventures, because it was amazing and my family absolutely loved it!     My recipe: (a few tweeks cuz I didn't have the same liquid smoke or onion salt)
    Measurements for 1lb of venison
    4 Tbs soy sauce
    4 Tbs Worcester Shire
    .4 tsp Cabelas liquid Hickory smoke (2 tsp for 5 pounds)
    1 Tbs ketchup
    1/4 tsp garlic powder
    1/4 tsp onion salt (.2 tsp onion powder = 1 tsp for 5lbs)
    1/2 tsp salt
    Red pepper flakes if desired
    I used 5lb in top round roasts for this Jerky recipe because there is not a lot of convective tissue in them. They make great Jerky. You can freeze your fresh roast for 2 hours prior to slicing to firm it up. I took my frozen roast out at least 2 hours from the freezer prior to slicing.
    Slice your slightly frozen venison roast against the grain to approximately 1/8 to a 1/4" thick. On my Cabelas slicer it ended up being number 6.
    Add the sliced meat to a large ziploc bag along with the liquid and squish to distribute the marinade.
    Marinate 8 to 12 hours in the fridge. Squishing the bags every few hours to ensure everything is marinating evenly.
    I dehydrated mine for 2 to 3 hours at 155° in my Cabelas 10 shelf dehydrator. Or 4 to 5 hours depending on your dehydrator.
    Rotate the racks if you find certain racks are dehydrating faster. Also turn your trays around if you find that that the meat at the back of the dehydrator is firming up faster.
    My Jerky still had a bit of a bend and flex to it but didn't feel squishy. If you dehydrate it too much, it will snap like a dry twig, definitely not recommended.

    I just use teryaki and garlic as marinade. Not into ketchup. But i might give it a try.

      That sounds good too! Teriyaki isn't a flavor we use a lot of in our cooking but for jerky I'm sure it's lovely!
