Just finished my batch of jerky, I cut a whole backstrap, 1/4” thick, with this recipe, the best venison jerky I have ever had. Let it marinate for 24 hours.
You only need to let it marinate for like 3 hours. I just made a fuck ton of jerky over the weekend and I let some marinate for 24 hours and guess what??.....it made absolutely no difference in taste or flavor
I use Worcestershire and soy sauce salt and pepper garlic and onion powder crushed red peppers same measurments as you did lhalf frozen deer meat because it's easier to cut and I let it soak for 24 hours it turns out very delicious you should try it brother I think you would really enjoy and it will turn out very spicy so be careful brother just warning you God bless and thanks for the video.
I make everything sugar free. I am on keto. I will sub the brown sugar with Sugar free maple syrup and see how that does. It works for bbq sauce this should work too.

Just made some from a recipe that was passed down to me: this is for 3lbs 1/4 cup soy sauce, 1/3 cup worcestershire, 1 tbsp salt, 1-2 tsp pepper, 1tsp onion powder, 1tsp garlic powder, 1 tbsp mustard.
I like to "bleed" the strips, massaging them in water and changing it out a few times until it's basically clear. It reduces the wild taste of the meat dramatically. Another thing I've found is to put the finished jerky in the freezer overnight, then let it thaw in the fridge when you've got pieces that are a little more dehydrated than others, it really equals out the consistency in moisture. Takes a day or two to thaw, but it's worth it when you've got both crispy and slightly gummy pieces in the same batch.
Sadly my jerky was too sweet and sticky for my preference. Thanks for sharing, but if I were to do it again I would change from 1/2 cup brown sugar to maybe a tablespoon.
Is there a deer jersey recipe that doesn't use venison? If so, PLEASE share it. I've never had venison than isn't deer meat and I'm curios....and a bit of a smart a$$.
I have been making jerky both with ground and with sliced muscle. I have found that ground jerky works better with dry ingredients mixed in with a little water. If you are going to try this for ground, it would probably be best to really cut back on the amount of liquid ingredients because this is more of a marinade than a spice mixture

@@jenniferdavidson7154 I did use it and just mixed everything together before shaping it and putting it on the dehydrator. I may have added a little more ground meat so the flavor wouldn't be too strong.
@mmurray571 replace it with the Worcestershrie souce. Just depends on you're taste buds. Taste the WS and taste the Dave's sauce .I prefer dales . Some prefer WS

Try using the same marinade then slicing your back strap like 1/2” thick then grill it fast and hot to med rare.

The soy sauce takes the place of salt because it's so damn salty

Accidentally thawed ground venison asks need suggestions for it. Did you try this on the ground and if so, how was it?

My dehydrator doesnt even have settings
Only thing different really that I use is dale seasoning
