I finally made it!! Delicious! My omni son and spouse said it was delicious and I could make it again. While it was cooking everyone said it smelled delicious. The szechan pepper leaves you tongue 👅 feeling weird. Like numb . Apparently normal. No one complained. Also added hot peppers 🌶 to sandwich. Made an Asian coleslaw salad. Thanks for the recipe.
Love ban mi-I usually do tofu but excited to give this rendition a try- I pickle all the veg together and add jalapenos as well & add some sriracha to the aioli.
A version is made with steam pork and pate. I guess the soy curls mimic the thin slices of pork and the seasoning is similar to spices used for pate. I looked up vegan pate and saw a recipe using chickpeas and sunflower seeds. Having neither, I tried it with oatmeal and sesame seeds. I thought it came out well, but I'm not picky, lol. I grind the seeds in my coffee grinder, dump it out and then the oatmeal. The oats will pick up any oils left from the sesame seeds and clean up my grinder. Also, using oats will reduce the fat. Another name for soy curls is dried bean curd. Most Asian stores should have it.
Made this today- marinade with regular black pepper and pickled carrots with how not to die’s date paste cause i didn’t have a sugar. Omnivore husband stole my test sandwich and would not give it back after tasting. This was my first soy curl recipe and I will 100% be making it again. Might have to try a sweet potato bun with scooped out insides next time
I normally use a white bean. Butter beans are really smooth. Very creamy. I think a little spice to the aiola would be nice. Also some birds eye chili chopped on the sandwich. Now if you don't like spice leave it out. I definitely am going to try this!!
Date Sugar: I add a little water to cover it and let is absorb it for a few minutes when adding to recipes. It combines better than whole dates and is more shelf stable than date syrup or date paste. I do make Chef AJ's date paste, though, and it is great, too!
Wow, great looking sandwich! I will have to try soy curls. I do use TVP, my husband who is an omnivore loves it as a mock “meat sauce” I don’t cook animal products for him in the house much anymore except on holidays. I will have to start carrying my favorite condiments in my purse from now on when I go out to eat on the rare occasion. Hubby hates to eat in restaurants but I go with my friend once in awhile. Loved this episode, Chef AJ and Lauren! Thanks!
That potato bun idea is absolutely brilliant!! Love it :D seems like a wonderful recipe overall :) thank you so much for sharing, Lauren is always such a delight
Soy curls (after hydrating, and depending on how wet they are) are about 600 to 900 calories per pound - roughly the same as hass avocado. So....I'd put them touching and immediately to the right the red line. And they are really delicious, so if you need to lose weight, I would at the very least measure them carefully and cut them with mushrooms for this recipe. Personally speaking, and I'm genetically thin, soy curls put weight on me quite fast! Tread lightly;)

Grocery outlet has soy curls in the Hispanic spice area.
