Name a chef worthy of a collab with Bruno. Plus, I spent over 20 years in the business and have found that two chefs (or three or four) complicate things. You need one leader with the concept but if you have two or more professionals at around the same level putting in equal amounts of input, it feels like two people trying to tie the same shoe. One has one shoelace and the other has the second one. Impossible. If you have two chefs of equal skill, one should direct and accomplish the concept and the other should chop, dice and receive direction from the other. Professionals are able to do this. Cast ego aside and one work under the other (sous). If you do not understand this, you haven't been there.
