Hey Bruno, when it comes to the finished pie, is there any difference between making the crust the way you did vs. combining cold butter with flour until crumbs form and then adding the rest of the ingredients?

Made this and it turned out perfect following your recipe. Mind you i had no whisk or thermometer but if you have good instincts those are redundant. I forgot to prick the crust base but it didnt seem to matter because it didn't puff up anyway

Comme tu as ajoute des oeux il aurait d ajouter 50 grammes du fecule du mais au lieux de gelatine et en faire sur un feux moyen sous forme de creme parceque comme on le sait tous la gelatine ce n' est simpat pour la sentee
