- Angelo Musa is the executive chef pâtissier of the Hôtel Plaza Athénée in Paris. Native of Cisternino in Puglia, the French-Itlaian pastry chef is known and appreciated all over the world for his fine works, the result of great skill and absolute perfectionism. In the labs of the Hangar78 school in Venice, Musa shows us his impeccable version of the classic French tarte au citron, also known as lemon meringue pie or french lemon tart. I used to make pastries for a living. He took the lemon tarts to the next level & even made it look easy. Hats off to you, Chef Musa!

In all honesty nothing he did was complicated, all rather easy. It’s just the amount of steps he did that make this seem complicated. I can guarantee that would be the best tarte au citron you’ve ever tasted.
He made it look easy because he's only making a couple for the camera. The real fun starts when you have to make 30 in 45 minutes
@@GeneralKenobi69420 dude you don’t make 30 tartes in 40 minutes. You make each component separately and then you assemble it before service. You can make 4kg of each ingredients and make 200 tarts of each I made a recipe very similar to this one before.

@@MAXXFIGO sempre preferibilmente poco proteico, per rendere la pasta più croccante. solo il t65 viene utilizzato per il pane.

Guys I can tell you this lesson is gold, I paid thousands to be able to learn with the best pastry chefs in France. He didn't hide any secret here. Awesome.
That’s true but if you didn’t paied those thousands you wouldn’t understand a lot of the words he said in this video.
@@pedroaires3168 no, all the technical words he could use are easy to understand, what's hard to find is people really teaching you instead of showing half of the process so then you don't understand why you don't get the same result!

We eat a lot of cheese & butter, but little processed foods, trans fat etc this is why we are healthy.. but italians eat even healthier i think ;)
If you walk everywhere, or at least walk a few miles a day as people in Europe generally tend to, you don't usually end up with heart issues. Also- portions. And variety. French and Italian food is full of butter and cheese and oils, but it's also incredibly nutrient-dense and varied (compared to the American diet -_-) and doesn't come in massive sizes.

@@Mutmutism well Italian genetically are freaks they eat pasta , pizza etc and yet 99% are slim and sculptured. but French people cuisine is amazing. both Italian French cuisines are mesmerizing .
It's an absolute myth that butter is bad for you. This has been scientifically debunked. Eat saturated fat if you want to live a longer life.
