It is puff pastry set on its edge in a ring filled with a super moist lemon sponge cake. I know how you love lemons. Could you come up with a recipe for that to share? Thank you for considering it.

Bruno you need to prebake the tart shell if you want to use custards or other very wet ingredients. As you can see on 5:04 you got a gummy bottom, which is a sign of unproper pastry baking process. Seems like a very simple mistake for such a great chef, it's 101 in baking schools.
Well, I do appreciate your input. It is true for some pies or tart that should be pre-baked. Though, most apple pies don't need to. This apple pie is baked over a pizza stone for more than an hour. The crust is perfectly cooked 😋... If I need to go back to baking school - you need better glasses 😎

Btw those rose apples? For anyone not in Oregon that is. Imagine a sweet tart as an apple. There's enough natural sugar in them to make your teeth hurt. They are lovely as-is but man...don't go in deep on them.
@@strawberryshortgirl2637 Mine were called Pacific Rose. Looked like a Granny Smith yeah, except for the blush. Little bit of a sharpness to them at the start, but then just five pounds of sugar come barreling around your mouth after that.
