I am big fan of Bruno. I made this cake twice for my son's birthday. It is very complex and it is a lot of work and needs experience. However it blew away everyone who tried it. I would never make it for anyone else though 😅

Yes you can use something called agar agar or just pectin. You can normally find it in organic stores

Bruno mon prefere - est il possible que les patissiers n ont pas encore compris qu il serait temps de diminuer la quantite de sucre dans ces superbes patisseries - pas seulement pour les diabetiques - mais pour ne pas devenir diabetique - avec toutes ces annees ou j ai vue et preparee des gateaux manges tellement sucree nous empechent d apprecier ces merveilleux gateaux parce qu il nous reste un gout de sucree desolant - y a t il une possibilite de faire toutes ces pattisseries avec un aute ingredient qui remplace le sucre - je regarde la preparation de cette superbe charlotte et a chaque couche on se noient dans du sucre - love you merci
Les pâtissiers Français l'ont compris depuis longtemps. Il y a beaucoup moins de sucre dans les gâteaux qu'avant. Cependant, il est impossible de descendre en dessous d'un certain pourcentage sans affecter le goût initial du produit et sa texture. Les sucres de substitution ne sont pas sans risque et certain sont a base de protéine qui en faite augmenterait l'appétit - donc il n'y a rien de logic dans tout ça. La meilleurs solution est de manger, comme de boire d'ailleurs, avec modération et faire de l'exercice. Une philosophie qui a toujours marché. Le reste c'est du business 🙂
