    Well, people are here for the recipes, why these irrelevant comments? One should be grateful that he is sharing his knowledge with us. If there is some question about the recipe then comment on that. Go watch some American recipe with 50 kgs sugar lol if you have a problem with his accent!

    I don’t like commenting on videos until I have actually tried making the recipe and this was the second triple mousse cake recipe I have tried and the other one was good but can tell you this one is hands down so delicious and worth the effort!! Mine looked just like your picture but I topped it with a strawberry and a side scoop of whipped cream and it looked and tasted as if it came from a fancy restaurant. Thank you for sharing such wonderful recipes and for being unselfish in including cooking tricks and tips too. This is probably my 10th recipe of yours I have tried and they have all been winners. I am learning so much from watching your videos.

      Bruno Albouze I apprenticed under a Swiss Chef. Three star background. Former executive chef for a major cruise line. The standard's were extremely difficult. That said no other chef impacted me more profoundly.

    Okay so I just tried this for Father's Day.
    It was amazing. The mousse had the perfect sweetness. The genoise was also really good, especially with that amazing vanilla syrup. The flavors all blended together really well and it was amazing.
    The only problem I had was I ended up with way too much milk mousse, which caused me to not have much room for the white mousse. No idea what happened, but it was definitely my fault. It still tasted great despite sloppy presentation on my part.

    I just made your Salade Niçoise with the tuna mousse and it was amazing! Thank you for the ideas, I tried many mousse based entremets before, they are time consuming but so worth it, just waiting on the weather to cool here in Southern California to make this one.

    Skinny white southern girl I out of luck as. I have and cannot afford a stand mixer, silicone cooking mats, for processor, food immersion thing, I still must watch because I so so love your mastery! Maybe one day the good Lord will bless me with such things. I adore your skill so much. Thank you!!

      Flutter Bize A hand mixer will work fine. It just takes longer. Silicon mats are unnecessary. Regular blender works just as well as an immersion blender. Most everything a food processor does can be done by had or using a blender. Again it just takes more time.

    It looks nice doing individual cakes, but finding those metal cases is not easy. This cake can be done in a round spring form or in a square one and cut accordingly.
