Salmon Chan Chan Yaki Recipe (Grilled Salmon and Vegetable Teppanyaki with Miso Sauce in Hokkaido)

  • We are making quick and easy Chan Chan Yaki, a local teppanyaki dish in Hokkaido using an electric griddle. The salmon is so fluffy, and the miso flavored Chan Chan Yaki is very delicious.
    How to make Salmon Chan Chan Yaki
    cookingwithdog...
    (2 people) Cook Time: 30 minutes
    * Time for removing fishy smell from salmon is not included in cook time.
    2 Salmon Fillets
    A sprinkle of Salt
    2 tsp Sake
    1/2 Onion (100g/3.53 oz)
    2 Cabbage Leaves (200g/7.05 oz)
    2 Shiitake Mushrooms
    50g Shimeji Mushrooms
    1 Potato
    1 Bell Pepper
    1/2 Long Green Onion
    5 tbsp Frozen Corn
    2 tsp Butter
    2 tbsp Miso
    2 tbsp Sake
    1 tsp Soy Sauce
    2 tsp Sugar
    1 tsp Grated Ginger Root
    Vegetable Oil
    * 1 tablespoon (tbsp) = 15 ml, 1 teaspoon (tsp) = 5 ml

    Hello everyone! Thank you for all your comments! Chan Chan Yaki is originally a specialty dish for fishermen in Hokkaido, the northernmost Japan's main islands. Denny's (family restaurant) in Japan was serving this dish last month. It seems they've renewed the menu so it is no longer available... :( -Francis

    I've been following your channel for years. I was trying to look for a salmon recipe today and tried this one. It was absolutely delicious! I think it will be one of my featured salmon dish at home.

    I ate sake no chanchan yaki 6 yrs ago at Onsen Kenkoh Land in Nagoya, Japan. I knew it was a fisherman's dish but it was so good with cold Namachu Beer. I'm Japanese living in the USA and Chanchan Yaki is served for my family since then. Thanks you for posting.

    I don't like salmon or much seafood, but I still enjoy watching these videos so much and they are great for things that I will eventually cook for my family!     Beauty, grace, AND mad cooking skills??? Chef, I think you might just be the Perfect Woman! When I grow up I want to be just like Chef, and I want a super well-behaved puppy companion like Francis to hang out with me while I cook food that looks and tastes like it came from a 5-star restaurant! I also want to find a place somewhere here in the American Heartland that sells all these beautiful and practical Japanese style cooking tools and dishes.

    I`ve never seen it made with ginger, and my wife uses carrots instead of corn. But chan chan yaki is my favorite. We place the salmon raw on the vegetables so it steams as they cook. I think that`s how most people in Hokkaido do it.

    on your channel. Because it is a very casual cooking, which is derived from

    as a suggestion and tip, if you guys don't have an electric griddle, you can also use a pan on low or med low heat. But like Francis said, griddles are the best! I have about 3 griddles. One for breakfast, one for Japanese food and one for Korean food!

    The big, flat pan she uses is an electric skillet or griddle, you can get one for about $20-$30 most places (though probably not in that round style). It's just to keep the entire surface area at the same temperature, and it's wider so you can cook more things on it. They're nice to have, if you don't already have one, I'd recommend buying one for future use.

    奥様、こんばんわ。
    今日の夕飯で悩んでおりましたところ、
    夕方拝聴し、さっそく使わせていただきました。
    鮭を会に行くのが面倒だったので、シャウエッセンのソーセージと
    あり合わせの野菜で試してみました。
    お豆腐がありましたので、これも使いましたが、
    味噌田楽みたいで美味しかったですよ。
    あとは、賞味期限12/3の蕎麦がありましたので、
    おろし生姜と白髪ねぎで、
    あんかけの暖かいお蕎麦も一緒に作っておきました。
    野菜たっぷり、ヘルシーな夕飯をありがとうございました。
    ところで、最近ペース速いですね。
    にもかかわらず、いつもどおり丁寧なお仕事ぶり、感心の極みです。
    クリスマスまでにもうひと仕事ですね。

    Most stores sell splatter guards; they're large, flat mesh strainers that you put over the pan to stop oil from popping out. Or you could wear oven gloves.

    yes, it does.its made from rice, its sometimes reffered to as rice wine, but since it is brewed more like beer, its more like "rice beer"
