日本料理とか、パンとかは何してるかだいたいわかるけど、フランス料理は仕込みから何してるか分からずバイト初日みたいな感覚だった。そこから出て来る料理もお洒落で仕込みも組み立ても別世界に見えた。単にフランス料理に馴染みがないだけかもしれないが、フランス料理店に行ってみたくなった。

Habitué de ce format pour les restaurant japonais. De voir ici une cuisine fusion entre la France et le Japon, juste l'image et le son... c'est parfait. Le chef est absolument incroyable, il déploie une palette de technique de dingue dans tout ces services.

I have been under a lot of stress lately. I love to cook but I haven't had the energy to invest as much time into it as I usually do. I've been watching these videos before bed and they're wonderfully relaxing. I really admire the skill and talent of this gentleman. It's very fun to watch him prep the individual elements and try to figure out what he would choose to do with each one. Plating is exciting because you watch it come together!

my mind was blown when he put the blended heart and liver of the duck into the duckstock. And i was so worried, that the duck would be too blue, but the butter bath cooked it absolutely perfectly. if i have ever seen a master at work, that video was it. such an amazing skillset, thank you very much for sharing this experience with us
