    Ingredients:
    1 red pepper
    1 yellow pepper
    2 red onions
    1 courgette
    2 aubergines
    1 bulb of fennel
    4 tablespoons olive oil
    2 tablespoons balsamic vinegar
    2 teaspoons salt
    For the tomato sauce
    1 onion
    1 bulb of garlic
    2 tablespoons oil
    3 x 400g tins of chopped tomato
    2 bay leaves
    Leaves from a few sprigs of fresh thyme or 2 teaspoons dried thyme (optional)
    1 teaspoon salt
    ½ teaspoon freshly ground black pepper
    8 sun-dried tomatoes
    For the béchamel sauce
    800ml milk
    100g butter or 80ml sunflower
    80g plain white or spelt flour
    50g Cheddar cheese
    1 teaspoon salt
    ½ teaspoon freshly ground black pepper
    1 teaspoon grated nutmeg
    To assemble
    200g lasagne sheets
    150g Cheddar cheese

    Wow, this recipe looks amazingly gorgeous. I love so much this twin brothers and his unique vegetarian dishes. As my 19-year-old daughter has left behind eating meat, this lasagna with so many vegetables looks fantastic. Thanks for sharing. And definitely I will try it for a Sunday lunch. xxx

      They said the temperature literally at the beginning. However for the time literally just use your eyes, don't need more. Anyway didn't like the style of how this video was made. Also could've been so much shorter. Annoying and unnecessary slo-mo.

    Wow this looks delicious! I'm definitely making this tonight. The roasted veg is making my mouth water. I've always made bechamel the Chef John way - hot roux + cold milk = no lumps. Thanks for this recipe :)

    The food looks great and I'm happy you shared the recipe, but video is kinda off-putting by focusing too much on "looking good" with all the edits and slowmos. It feels more like an extended TV-commercial than a cooking segment. Also, the audio voice-over is really rough to listen to. Sounds overly compressed. Again, not taking anything away from the recipe, but yeah.... not feeling this kind of production plays well with the other content on Foodtube? Just my opinion

      I understand you want subscribers, but misrepresenting my 6 month old constructive criticism is not the way to go about it. At least take a moment to learn what it actually means "to hate" something. By the by, you telling me to "shut up" for making a perfectly sensible comment on the audio production is exactly what "hating" is. "Just saying".

    Definitely trying this. I used to be a firm believer that lasagne should always have meat in it, until I tried vegetable lasagne, amazing and full of flavour.

    I made this tonight and it was absolutely delicious! I didn't put fennel in mine because I hate it, but I had a few mushrooms instead. Don't skimp on the sun dried tomatoes - they really do add a richness to it! So good! Mine was in the oven for about 18 minutes. Pasta cooked fine.

      Making this lasagne now and just found my comment here from 2 years ago. This recipe is still going strong! I will mention that I don't add cheese to the bechamel and I also don't use fennel in my version of this lasagne. You can modify it to your taste which is just great!

    Must try this. I used to do home made lasagne with peppers, onion and beansprouts. If you add the beansprouts raw as you assemble the lasagne, they keep their lovely crunch.

      30 minutes enough. I cook similar lasagna for many years

      This is old, however. The lasagna is already cooked. Only the pasta needs to cook and the cheese to melt. So, just check that the cheese is brown. 20 minutes to 30 minutes or so.

      Hey Michael, sorry I didn't respond in time. How did it turn out? I tend to bake most things at 180 degrees celcius and I don't have a specific time length either - just until it looks cooked. You're aim is really just to get the pasta cooked, the sauce warm, and the cheese golden

      Aleisha Kudrass I went back and watched it again x3..in the beginning, he mentioned 200 degrees...the uncooked noodle were a little too al dente. I have been reading that there are "oven ready" pastas, have to do a little research. I will make this again,this time trying cooked noodles. The roasted veggies was a great touch to the sauce. Thankx!

    I have made this lasagne several times now and I love it! It is the best veggie lasagne ever, every time I make it it goes faster than the meat lasagne. Love the video and the format, not sure why all the comments relating to slo mo etc., keep it up Happy Pear 😀

    Swapped out the fennel for celery and sun dried tomatoes for tomato puree. Also added a splash of red wine to the sauce.
    Utterly delicious!

    With the béchamel sauce and eggplant, this make the lasagna something like the Greek moussaka dish. Also, here are the Happy Pear guys cooking for us before they went vegan! Anyway, thank you for sharing this, I'll definitely be making it.

    People, please relax. Vegans or not, this recipe is awesome. And I don't see anything wrong with showing two handsome men in slow motion. 200 degrees celsius for 30-35 minutes was enough for my lasagne.

    Thank you for the recipe. We have a vegetarian friend coming over tonight.
    Few changes:
    Added chopped tomatoes and punpkin to the medley of veggies for roasting.
    Replaced fennel with mushrooms.
    Added oregano to the herbs.
    Substituted chopped tinned tomato with passata.
    Replaced cheddar with mozzarella and parmesan.
    Used lots of sundried tomatoes (more than shown) for extra oomph.
    Cheated and used store-bought bechamel sauce because I always mess up making bechamel.
    So delicious. This will definitely become a family dinner staple.

      It's only terrible if the person is an idiot not learning what a balanced diet means before going vegetarian, since technically you could eat only candy and call yourself vegetarian.

      i hold no qualification except some common sense and the knowledge that all the vegetarians that i know are just as healthy as those who eat meat.
      does your fiancée also advertise going to the supermarket and buy meat that is full with antibiotics? because that is what most non-vegetarians do and what i used to do aswell (and i am not proud of it) that is one of the reasons i went vegetarian, because our understanding of meat is just horrible. most people dont really notice or appreciate meat as much as it should be appreciated.
      i dont want you to go vegetarian or vegan or any kind of that. live your life how you want to do it.
      i am just asking for some thought when it comes to meat consumption. people should not buy the junk which the supermarkets and fast food restaurants call meat, but rather eat less meat but eat good meat when you do so.

    I made this and my vegetable loathing husband enjoyed it (I cut three veg into 1cm cubes), although he was momentarily disappointed that it didn't contain beef! 😂 Easy and delicious.

      How long did you cook the veg 4??
