White Fish with Fire Roasted Tomatoes & Capers
by Faith and Flour
1 large Onion, chopped
1-2 cloves Garlic, minced
1-2 tbsp Capers, drained
1 (14.5oz) can Fire Roasted, chopped Tomatoes
3-4 White Fish Filets (I used Barramundi)
In a large skillet, sauté onion in olive oil or butter until translucent and slightly golden. Add garlic and cook for 1 minute. Add the capers and tomatoes. Stir well to combine and bring to a simmer over medium/high heat. Tuck the fish filets into the sauce, covering and immersing in the sauce to cover as much as possible. Cook over medium heat for 8-10 minutes, turning halfway through or until fish is cooked through. Serve over rice and enjoy!
Granola
by Faith and Flour
8 cups rolled oats
1 cup sunflower seeds
1 cup chopped pecans
1 cup pumpkin seeds
1 cup coconut flakes (unsweetened)
1/4 cup flax seeds
1/3 cup olive oil
1/3 cup maple syrup
2 tsp. cinnamon
1/2 cup dried fruit (I used chopped apricots)
Preheat oven to 350 degrees F.
Mix all ingredients except dried fruit in a large baking or roasting pan. Spread evenly.
Bake for 30 minutes total. Remove from the oven and stir every 10 minutes to roast the granola evenly.
When the granola is finished baking, remove from the oven and add the dried fruit.
Stir and allow the granola to cool on the countertop.
Pack in jars and enjoy!

It’s just a pleasure to see someone ironing! I’m a child of the fifties and to this day I still starch and iron doileys. My kids think I’m nuts but I take pleasure in making my home look nice and taking care of our clothes. My husband and I are recovering from Covid at the moment and to help pass some time I have been re watching some of your videos as I find them both relaxing and inspiring.

This is such a peaceful video! Thank you, Robin! I am currently enjoying the beach in North Carolina and thanks to your suggestion we are using Turkish towels instead of regular beach towels. They are so much better! They are light weight to carry, dry quickly, and sand doesn’t stick to them. Thanks for the inspiration!

I love your style, so peaceful and calm. As I tend to be the frenetic type, I’m trying to mindfully embrace a calmer and more laid back style. This is the best way to make yogurt!! Fairlife is also lactose free, which is probably why it makes your tummy happy.
I love ironing as well. (As did my mom). So peaceful and prayerful .

Ironically I was ironing while watching your video, so when the segment came up where you were ironing, I was right there with you😊 I have a small side job washing and ironing the tunics we wear at work. I also find ironing relaxing and use the time to catch up on some videos. TFS
I remember when I was growing and everything needed to be ironed my mother kept it in a bag sprinkled with water until ready to start. I started learning with the pillowcases, and when I got very good I ironed my oldest brother's dress shirts. (He went to a fancy private high school.) Ironing was fun at that time in life. My mother listened to the Boston Red Sox games while she ironed (a nice memory). Now I don't do much ironing. I really find it quite a chore, but listening to music or a podcast would make this chore a quiet time. Thought that omelet sounded delicious. Glad you had a nice visit with your parents. I'm going to a niece's wedding next weekend so I'll be able to visit with a portion of my family. Have a great week.

Hi Robin….I make yogurt every other week for my husband. I do the cold start also and I use plain Greek yogurt as a starter. My husband is diabetic so I omit the sweetened condensed milk when I mix it together. I fold in sugar free vanilla instant pudding mix after the 5 hour rest time in the refrigerator. He loves it and it is so good for his gut health. He really misses it when he runs out.BTW the whey is great for dogs!

Thanks for sharing. I don't do much ironing these days. We usually wear casual clothing and most of mine has some stretch to it. If an item is prone to wrinkling I get it out while it is warm and smooth it out with my hands before folding or hanging. Every dish looked delicious. I love Greek yogurt. I add trail mix to it. Daniel and I love fish but Lee doesn't.

Happy Monday, Robin! Thanks for another informative upload! It was so nice to see that your parents came for a visit and your Mom's apple omelette is definitely a recipe I will try. I remember years ago when guest would visit us, I too attempted to continue my daily cleaning routines, but soon learned that it made my guests feel uncomfortable and sent a message that their visit was disruptive to me in some way. I later adapted my routines to just tidying up the bathrooms and the kitchen every evening so that everything was refreshed and reset for everyone for the next day. I even would set out on the kitchen counter plates, bowls, and utensils or mugs near the coffee/tea station so that my guests could easily find whatever they needed without having to go hunting through the cabinets. I learned to simply enjoy my time with my guests while they were visiting and resumed my Daily Routines once they departed. Have a Great Week Ahead!

I honestly cannot say if these ideas came to me on my own, but early in my "adulting" life, I could feel an energy shift in my guest whenever I was busying myself with my usual daily routines 😕. They felt as if their visit was disruptive and it made them feel badly, which I honestly didn't want, so I just did the needful and let the rest wait until they were gone.
Dear Robin, I love your videos so much. Barramundi is an Australian fish - here in Australia we shorten everything so we call it “Barra “ 😂😂. Your pronunciation was pretty good , but we pronounce it with an “ee” sound at the end, like in “sweet”. Beautiful fish, and I love how you cooked it xx

Happy Sunday Robin! I enjoy ironing more now too! I used to procrastinate it until I had a huge pile but now I always do it on Tuesdays (Monday is my laundry day). Watching you iron was so enjoyable and relaxing 😊I don't have an Insta pot but have been making yogurt every week for about a year now in a little yogurt maker that I got on amazon (Bear brand) I highly recommend it, especially for thick greek style yogurt as it comes with a straining system. Have you made homemade coffee creamer with sweetened condensed milk before? That's something I've been researching recently. Mary from Mary's Nest is encouraging me more and more to ditch so many store bought items and I have you to thank for that because that's how I found her channel! She's incredible and so are you! I usually stick to nut milk in my coffee because of my lactose intolerance, but you are right - I really should figure out how to create my own to avoid all of the unnecessary ingredients! I just got an instant pot and started making yogurt with the fairlife milk, because it is lactose free and filtered, so you don't have to boil the milk first. There is a local dairy that makes lactose free yogurt here in Northern California but it is hard to find. I don't care for the sweetend condensed milk so I just leave it out. And I strain it through a tea towel after it is finished and chilled, so that makes it thicker, too. I started making yogurt about 40 years ago, using a recipe I got from a Greek cook book. The instant pot is much easier.

You can do yoghurt whitout an Instant pot. Just leave the yogurt-mix on your countertop on room temperature for a day. Then put it in the fridge. It's more frugal to dry the clothes on the sun in summer instead of put them in the dryer.

Hi Robin, ironing is my least favourite chore in the home. in the UK we iron much more but I am trying to use the principle of hanging and folding much more to reduce the amount. Have a great week ☺

Robin I had to chuckle when you said you plan while ironing. I was planning how I was going to tackle our laundry from our month long trip to Europe and England. I was sitting on the plane thinking how I was going to do it all. I even gave my husband instructions on which pile to put his dirty clothes once we got home.

I know you said you don’t have a Costco membership, but if you do decide, their gluten free pizza is the best I’ve tasted, including in most restaurants. I can get 3 pizzas for around $16. In my grocery store, they’re about $10/pizza. Have a wonderful week.

I love ironing! Ok, I’m not working anymore so I have more time and I change my summer clothing to linen or cotton. No way I can wear them without ironing even they are will be wrinkled soon, but it still look better.

How to clean e-cloths
Ironing can be very relaxing- especially if you aren’t trying to rush out the and all your clothes needed ironing. Put on a good movie or podcast or pray.

Everything looks so clean and crisp when you finish. Does homemade yogurt taste similar to store bought or does it have a different taste? I’m not a fan of store bought yogurt. Thank you Janet! My parents loved our new home and we were so happy to be able to share it with them. I would say that the homemade yogurt is very similar in texture to the yogurt found in Europe. It is thinner and creamier than most American and Greek yogurt. You can choose a yogurt that you like (plain with live cultures) to use as the starter and your yogurt should have a very similar taste. Hope that helps! 🌼💛🌼

Mediterranean flavors work so well with white fish, and we have made herbed couscous along side the fish, just fabulous 😋 (Herbs are dried oregano, basil & fresh parsley) Seasoned with garlic, olive oil, capers and some kalamata olive's. I love yogurt but also have “issues” with store bought yogurt. Yogurt parfait is one of my favorite breakfasts. I need to try both your recipes for yogurt and granola.
