The reason why you want to put tofu without water in the fridge is you dont want it to be too wet when making the balls. You can reduce the flour if the tofu is a bit more dry.. Its ok if the tofu is dry and get a little smaller in the fridge. You make a bitter firmer ball and its less likely break if you deep fry it. You should try using a dryer tofu so you can use less flour... And you forgot to put in one egg into the mix.
