  • In this video Dennis Pollock demonstrates how you can eat an enjoyable meal, have a dessert afterward, and still keep your blood sugar low and at a reasonable level. Dennis shares about the amazing nature of blueberry scones, keto style, which do very little to raise blood sugar, along with a dinner meal which is safe for diabetics. This is a meal and a dessert you will want to file away somewhere and pull it out frequently: It tastes great and hardly budges blood sugar!

    Scones Recipe:
    SCONES INGREDIENTS
     1 cup blanched almond flour
     1/4 cup coconut flour
     1/4 cup Stevia (or any granular sweetener of choice)
     1/2 tsp baking powder
     1/4 tsp salt
     1/4 cup heavy whipping cream
     2 tbsp coconut oil (melted)
     1 large egg
     1 tsp vanilla extract
     1/2 cup blueberries
    TOPPING INGREDIENTS
     1/2 cup sour cream
     4 packets stevia or other non-sugar sweetener.
     1 teaspoon pure orange extract
    INSTRUCTIONS
    1. Preheat the oven to 350 degrees F (177 degrees C). Line a baking sheet with parchment paper.
    2. In a bowl, combine the dry ingredients.
    3. In another bowl, whisk together coconut oil, heavy cream, vanilla extract, and egg.
    4. Mix the dry and wet ingredients together thoroughly. Then mix in the blueberries.
    5. Place the dough onto the lined pan and form a circle. Cut into 6 or 8 wedges. Separate the scones. Bake for about 18-24 minutes, until golden.
    6. Mix the topping ingredients together. Apply to the scones once they have cooled.

    I also wanted to say that I make a sheet out with my sugar test reading before and list what I eat and then again like you do ... another test after. This is for me as well as my doctor who loves it. She sees my progress as I go from diabetic to non- diabetic. A1C from 7.3. To 5.5 and now 5.2. No medication. Only diet.

    I have gestational diabetes, before pregnancy I was borderline diabetic. It's never easy for anyone to be on a diet, and more so while pregnant but you have made a world of difference in my journey. Your videos have kept me motivated when I wanted to give up. Thank you.

    It has been awhile since having a homemade scones. Thank you for the recipe. Stevia is a member of the ragweed family. I can't have that but could substitute. Good meal, Sir. This is how I like to eat.

    Yummmmy scones !!! My grandmother always talked about scones...shes british...never knew quite what she meant....i guess almond and coconut flour are great additions to dessert recipes for people trying to maintain low blood sugar

    You go down overnight while sleeping. I go up. I go down during the day and have my low number right before bed. I did a cheat day and tested a couple hours later and i went down. In the morning is when i saw the spike. It's like it takes a half a day for my blood to catch up and show the new glucose level.

    Off topic: resistant starch.
    I would like to see if resistant starch really has "less to no effect" on blood sugar.
    Each time a potato cools and is reheated, the starch is said to become more resistant as if a fiber instead of a carb.
    Hypothesis: reheated potatoes affect blood sugar less and less, according to how many times they have been cooled and reheated. If true, then you should have a lower spike in relationship to the number of times the potato was reheated.
    Day 1: Cook 7 similar-sized, regular potatoes: then eat one potato while still hot; let the rest cool off.
    Day 2: heat all the potatoes again, and eat one potato while still hot; let the rest cool off.
    Day 3: heat all the potatoes again, and eat one potato while still hot; let the rest cool off.
    Continue until you have eaten the 7th potato.
    Are reheated potatoes more diabetic friendly?

    I will make them with strawberries I can have those but not most fruit. My sugar spikes bad. I have my go to fruit that that is okay.

      Berries are good, strawberries, blueberries, raspberries. Loads of taste not much sugar.

    In the beginning, it's a challenge to overcome sugar addiction. And we have come to believe the standard American diet is of sugar addiction.
    One of the many advantages of keto is that I can eat beyond satiety. I mean eat a lot!
    My glucose stays within healthy range.
    Desserts include jello cup and a couple of tablespoons of whipped cream. I also have 90% chocolate sweetened with stevia and erythritol.
    No bread!

    LOL, now your baking! Who would have thought? Earlier you declared that you wouldn't be providing menus or recipes. We keep pulling you in bit by bit. I have fabulous blood sugar control and I am older then you. But my best buddy husband is very insulin resistant. Foot problems, leg cramps, disrupted sleep, fighting dreams and brain fog......we finally figured it out in time. Dr will wait for the damage, they say nothing. Your videos are very helpful to me so I can be helpful to him. You're entertaining, informative and a God send. Thanks Chef Dennis!

    I watched this same video when it came out. I happened to be in Lima and bought lots packets of low carb chicha mix for dirt cheap.

    Sounds tempting I got my diabetes under control I’m at 5.0 a1c and I never eat desert I’m scared I might not be able to control my self I don’t even miss sweets my desert is peanut butter

    I can actually say I have been to Devon in England the home of the scone (cream tea), but it will be served with strawberries and thick cream inside the scone. Absolutely delicious!!

    I made the exact same meal today for lunch. I had two strawberries scoans instead of one with coffee. My blood suger was 113 after 1hr and 10 minutes. Not bad. Compared to me eating a hamburger bun. It would have been close to 200. Or I could have cut the bottom and top of the bun in half and just had 1 scone.

    This morning for breakfast I had bora (a green bean) chicken and very young plantains my BS was 103 half hour later 126....I jumped for joy that was an improvement for me.....

    More videos like this please. Now this is very helpful being able to see meals to eat. Rather than being told to eat salmon , eggs , avocados and berries and certain vegetables. Yeah thats perfect for a short while but you need variety you can't eat one boiled egg for lunch and a piece of salmon with broccoli and cauliflower for dinner every single day. Meal ideas like this are amazing and so helpful thank you again

    Thank you for all the info you give to us.
    I have been diagnosed with diabetes 2, dr said my sugar was too high and probably have the illness for a long time without me knowing it. ( have not been to a general doctor in about 20 years) my sugar was 216.
    I am under medicine and of course changes on my diet have been done.
    Question, if I control my sugar, can I ever eat normal stuff once in a while?
    I simply detest almond flour, and I would like to eat a normal scone. Or
    A piece of vanilla cake. I can deal with the sugar replacement but the almond flour it tastes awful to me.

      Young people who keep their weight at proper levels, and who catch their diabetes early can often get to a place where they can get away with eating higher carb foods occasionally. As you get older this becomes less likely.

You give such great advice and are super encouraging to those who struggle with diabetes but honestly those who struggle with their weight can benefit as well.     I tried making these today minus the topping. Came out great. I had to sub a few ingrdients. Used 4pkts splenda and 1tbsp sugar and a little bit of orange rind bits as i like the orange taste. Half nhalf for the whipping cream and butter instead of coconut oil. I couldnt cut it easily as it was sticky but thats ok. Made into 4 pieces. Tasted awesome. Thank you.
    Am Not diabetic but seeing as how many of female relatives were diabetic, i i made the change to being mostly low carb. Dont make dessert often and stick to some fruit but these make for a quick dessert or breakfast item.

    The problem with almond flour is that it's loaded with glyphosate (a chemical herbicide) Almonds are notoriously high in glyphosate residue. The only way around that would be to use organic blanched almond flour as organic farming uses a different herbicide that theoretically washes-off easier than glyphosate.

    same ingredients I use in my blueberry pancakes. but more blueberrys so I don't need syrup or topping. except butter. They keep well in the fridge and are even good cold.

    Great video. I have not ventured into low carb baking yet. It seems a little intimidating. I do rely on berries for my desserts. Yesterday I had blackberries, stevia, and heavy cream. Very satisfying. Thanks for the good ideas.

      @@beatdiabetes3 Question: Is the stevia you're using a 1:1 in sweetness compared to sugar or is it like regular stevia which is much sweeter than sugar? I am about to make this recipe using a 1:1 sweetener erythritol/monk fruit blend by Lakanto. Also, thank you so much for your videos, I really enjoy them and even my diabetic about to turn 97 yo dad likes them, he is type 2 on insulin, never went on low-carb diet, etc., was very stubborn, now has serious organ damage and is a miracle he is still alive. My brother is also type 2 on insulin, ignores my advice for low-carb more keto-like diet. :( I've been diagnosed with pre-diabetes a few years ago but staying away from meds by way of better foods for those of us who can't tolerate them. I've lost 12 lbs in a month without being hungry and enjoying a keto/paleo like diet with a little bit of cheating here and there.

      I know how hard to take the diagnosis of DM even if it is type2 as we think that we are going to be deprived from food .. but thanks God to the informations available nowadays that we will have best diet solutions for us .. but we need to be patient and motivated ..       Do not think about what you cannot eat. It is not that difficult. I am not a diabetic and i have avoided sugars and carbs for the last 3 months. I got improvements in my eyesight, good energy level and in good mood too! Dessets can sometimes be a bit salty, not sweet all the time🤪. Try this soak some chia seeds in 1/3 cup of cold water, cut up an avocado into small pcs, mixed avocado n chia seeds mixture in a dessert bowl n add a pinch of pink salt. Then add henerous amount of coconut cream. Chill this mixture. Wa smell good and taste great dessert is born! I am a chinese n avocado is a western fruit to me😅. Try n be assured it taste good. A salute to Sir for producing all these videos, you have helped many n gave them a way with hope😘

    What about egg rolls, the ws have high carbs but lot of fiber because alk the veggies. bjs fresh chicken ones taste the best

    As long as you can control quantity of what you eat , your blood sugar will stay low .

    We have been eating 4/5 course dinner vegetarian meal and dessert. Out blood sugar never crept above 130. Our typical dinner - cucumber, celery with veg mayonnaise, tahini sauce, steamed smashed asparagus /eggplant/broccoli/green beans, gobi-paneer makhani, cabbage curry, zucchini tofu. Typical desert homemade dark chocolate, berry/yogurt/seeds fruit bowl.

    How many total carbs in this scone recipe? I want to make this for my type 1 grandson, and he has to know the exact carb count. Thank you for the recipe.

    Agree with indicidual testing! I found a "safe" side dish, Mashed Cauliflower, that was NOT safe for me according to Mike.

    I'd much rather have a half bun for the burger over the scone. And I'd add a nice thick beef tomato with it and some German mustard. Lots of raw purple onion.

      The bun/bread probably has a lot more carbs than the scone. The tomato sounds good, but it's a fruit and those carbs need to be factored in. It's just the way it is. Be good to yourself.

    Good news, there’s a bread that comes from the store, tastes like freaking bread, and has very little effect on blood sugar at only 6 NWT carbs per slice! It’s Schmidt’s 647 bread. Happy burger has bread :)

    My rice is cauliflower and saluted cabbage wit garlic, my blood sugar stay still.. Everything I eat I sprinkle it with apple cider vinegar.. That's what they do in Japan.. Try it Dennis and make an awesome video with it.. Thanks, great video.. God bless..
