You are Spot On !! Love your recipes You are a Great Teacher of the South and use cast iron pans ,teach them how to clean them out don't use water wipe them out and you all save your bacon grease put in a coffee can it can save your cast iron skillet God Bless Bless your Mf.corn 🍞...

That smoked sausage looks quite similiar to what is the Swiss national sausage. You are using plenty of it. Cooking over wood fire is just fantastic. It provides a unique taste to the food and it's just the most natural way of cooking. I absolutely love it. By the way. Did't know you would use Worchester Sauce, but i always used it for Jambalaya. It was like intuitive.
I don't think the wood fire gives it any specific flavor because it's in a pot he's not smoking it dude... and he didn't use any Worcestershire sauce, he used Want-your-sister-sauce just listen again🤣

The Zaratains Jambalaya mix is very good. Just saute some onions, celery and green pepper and add it to the mix.
