  • In this video, I showed you the step by step process of making fondant, using Nigeria's finest Confectionery sugar, GRACE GAO ICING.
    This recipe is the one of the official recipes for Grace Gao Icing Sugar and I will be sharing more in weeks to come.
    I added additional 1/4 cup water to mine in this video.
    Add water if it is too firm or more icing sugar, if it is too soft.
    Also, after wrapping with cling film or a plastic bag, place in a tightly covered container so, it doesn’t dry out.

    11/2 tbsp GELATINE
    1/2 cup GLUCOSE
    1 tbsp CMC

      Wrap it with a cling film, put it in an airtight container n put in the freezer

    I used this recipe and it turned out very nice but it became lumpy on long storage. Does anyone know the reason for this?

    Because if I want to do 1k I don't no how to divide it...after kneading it hw many minutes will I keep it

      Simply divide the recipe into 3. Super easy.
      Icing Sugar 1500kg = 500g x 2 = 1000kg
      Water: 1/2 cup = 39.3ml x 2 = 79ml (1/3 cup)
      Gelatin: 11/2 tbsp = 1/2 tbsp x 2 = 1tbsp
      Glucose: 1/2 cup = 39.9ml x 2 = 79ml (1/3 cup)
      Add additional water if the need arise using a tbsp or add additional icing if it is too soft.

    Your title tells.. All weather fondant..
    I Just had a doubt... Do this sweats once we place the fondant design on the pastry cake and store it in the the fridge till we deliver it to the customer..... Because i really struggle with this fondant sweating & melting issues....

      We don’t place our fondant cakes in the fridge. We cover and leave it on the table counter top.

      No, you don’t need to sprinkle anything on the table. You knead until stretchy.

      You can add it to the liquid for easy blending or after you make your fondant. Just ensure you use GEL FOOD COLORS

      Ma,you used 1.5kg meaning if she doubles it she's will be using 3kg
      How then would she double the recipe to get 2kg

      First divide the ingredients by 3, so we now have 500g of Icing Sugar, then multiply by 4, now we have 2kg (2000g).
