If you watch the video gently, notice where my mixer was at each stage. Also, mixers differs so mine might not work for yours. Tips I can give are: 1.Beat egg white and sugar on high speed and until it looks like meringue. Resist the urge to over beat. 2. Mix batter with flour present on low medium speed for all your cakes because you do not want to activate the gluten in flour when you over mix. You can do 2 “6” or “7” it depends on the what you are going for. Height or width.
