      I had to go back to drinking milk……. My body rebelled…….. But….. I’m very visibly thinner in the face……. Much less inflammation.

    Do you suppose it could be made without as much of the meat? Like mostly skin, head, back, joint bones and such? Did it stay firm at room temperature? I may try that this fall. Thanks for sharing.

      You can absolutely make it however you want with whatever you want! It definitely starts melting when it starts getting warm. I like to slice it refrigerated temperature.

    We weren’t very skilled at making souse meat growing up. We tried is all I could say. Once you’ve had some that’s really delicious, you try to make it taste just like that , but we failed. So… we started taking the pig parts to the man that made the DELICIOUS Souse meat and he turned it into a masterpiece of deliciousness !!! His name was Rufus Preston and he lived over between Lynchburg and Belvidere , Tennessee. Mr Preston also made THE BEST Hoop Cheese in the land !!! He had one of the finest herds of Guernsey Cows I’ve ever seen. The cheese he made and the butter he made was almost Heaven. He’d cut a wedge of cheese and a tray of souse meat and set it on the table with 2 sleeves of crackers and everyone got a Coke in those little glass bottles. As kids , this was a treat !!! We didn’t get Cokes to drink at our house unless we had company or maybe a 7-UP or Sprite if you were sick. Here I go down memory lane again. Y’all have a blessed day.

      I found it in the local grocery IGA….. a couple years ago….., but I have taken care of my grocery needs for the past while and don’t go anymore.

    Micah, As a lad some 7 decades ago I 'helped' my Grandmother make Whole Head Hog Headcheese in a huge pot on her stove top. I don't recall so much seasoning. Otherwise procedure was much the same. Mouthwatering. Likely I will stop by tomorrow to a local butcher who makes headcheese and buy some. Almost as good as Grandmother's. Good video. Best

    It's definitely worth the wait! Headcheese looks delicious. The only problem is finding a local market that sells pig head, skin, and trotters.

    Man you talk about some good eating. Love what y’all do. Raised doing this all year, constantly looking for stuff to preserve. My parents had a 52 week plan. Figure out how many times you planned on eating a certain food per week times 52 weeks a year gave us plenty of food per year. Mind you he was feeding 7 kids, did it multiple times a year on some stuff. Used mostly for canning produce. Can till you can’t.

    Put a little apple cider vinegar with some salt and pepper on the souse right before you eat it. You'll be happy

    Curcurmin in Turmeric is a really powerful antiinflamatory that does wonders for cells inside of petri dishes. Unfortunately for people it cannot cross through the intestinal lumen so it all ends up going down your plumbing and not providing health benefits to your body.

      @@McGieHomesteadAdventures Curcurmin is a powerful dye, that's why they add it to chicken stock and mustard, to dye them yellow. After it runs through your liver it changes from bright yellow to more of a rusty orange but it's still extremely potent. Your kidneys clear it out pretty quickly too. If it's not turning turning your pee rust colored it's not entering your system. Black pepper does increase the bioavailability but 20x 0.05% is still only 1%.
      turmeric is great, it makes the food taste look and smell good, I would not expect great improvements in health based on consumption of it.

      Let me start by clarifying that head cheese and souse are two different Pennsylvania Dutch recipes. Souse has a vinegar base to it, that you can distinguish from head cheese, that does not contain vinegar. Typically, souse only uses pork feet, hocks and some shoulder meat, along with the spices, onions and vinegar. The liver, tongue, heart, kidneys and hog head are reserved for use in scrapple. The book I used as a reference is; Great Sauasge Recipes and Meat Curing by Rytek Kutas. This book separates souse and head cheese as two different recipes, just as my Pennsylvania grandfather's family recipes did.

      For a small batch of souse with minimal ingredients, I used The Wolfe Pit from youtube. That recipe includes pork neck bones, pork feet and hocks, onion, pickling spice, crushed red pepper flakes and vinegar. This is just a basic souse recipe. The worst part of making souse is removing the bones. I can just imagine the bone picking session once the meat was cooked.
