LOW CALORIE DENSITY FOODS | What I Eat In a Day 🌱 Part 1 Vegan Michele

  • Welcome to this What I Eat in a Day for my weight loss journey. I share how I use calorie density to eat and feel full while eating lower calorie dense foods to feel satisfied. I share some tasty low calorie dense recipes and healthy meals you for sure will enjoy! Recipes below. xx
    🍲 Pickle Soup Recipe
    1 sweet onion (chopped)
    3 cloves garlic (chopped) + 2 more cut in half length wise
    8 cups water
    2 large potatoes (peeled & chopped)
    2 carrots (peeled & chopped)
    2 ribs celery (chopped)
    4 cubes vegetable bullion
    4 pieces whole all spice
    1/2 tsp peppercorns
    1 tsp thyme
    1/2 tsp marjoram
    4 - 5 pickled gherkins (chopped; Polish gherkins are the best if you can find them. Try to find them at the Polish or Russian Deli or Big Lots)
    1/2 cup of the gherkin juice
    1 tbl fresh dill
    1 tbl fresh parsley
    1/2 tsp salt
    In a large soup pot heat a little bit of vegetable broth or water on medium high, add onions, chopped garlic & sauté till golden brown (7 - 10 minutes).
    Add potatoes, carrots, celery, water, all spice, the 2 garlic cloves cut in half, 4 cubes bullion, peppercorn, thyme & marjoram. Boil for about 20 - 25 minutes until vegetables are tender.
    Turning the heat down to medium, add chopped gherkins & continue at a medium boil for 10 more minutes. Then add dill, parsley, gherkin juice & salt. Turn off the heat, cover & let stand for at least 10 minutes. The longer it stands, the better it gets.
    🥔 Healthy Mashed Potatoes
    10 - 12 golden potatoes (peeled & quartered)
    2 tbl fresh dill
    salt to taste
    In a large soup pot add potatoes & enough water to cover them. Boil for about 20 minutes. Potatoes are done when you can poke them with a fork easily. Then drain & put back into the pot (no heat). Add the salt & dill.
    Mash with a large fork or using a manual potato masher. Garnish with more dill if desired.

    Love this video! Hmmm....pickle soup? I may have to try that. Potatoes look awesome. My dad always told me to eat to live not live to.eat! He will be 86 years young this month!

    I happened to get on RUclips looking for some inspiration. I started my weight loss journey, July of 2019. I set a long term goal like my goal weight is 250. I started at 375 meal prepping and researching. Long story short, I lost 50 pounds and gained about 20 back. I am roughly 340-345. I have fell off the wagon and I am tryin to figure out how I can do so. I found your channel today, surfing RUclips and I think I want to try this. I notice I am an emotional eater and also eat sometimes when I am not hungry. I want to plan ahead and I think you are doing great with these videos. I just subscribed. I may consider this lifestyle. I really like it and it isn't extravagant meals. I love it!! Keep it up

      Hey Keyandre! It’s so true the mental aspect as well as the foods we eat both play a part at long term consistency towards reaching our goals. I think you would really enjoy eating this way as you can eat a lot of volume of food but still be in a calorie deficit to be able to lose weight.     So glad I found your channel!!! I have been stalling out and getting discouraged... Then you mentioned water - and I am the worst with drinking water!!     Hi Michele, your videos were recently suggested in my feed and I’m enjoying them. Congratulations on the new baby! Since I just discovered you I missed your live with the salad dressing recipes. Where can I find them? I am really struggling with salad dressings so I am hopeful I can find some easy recipes which aren’t full of tree nuts or tahini. Thanks in advance!

I’m also just wrapping up my new cookbook where I have a TON more dressing and dip ideas. It should be ready in a few weeks.     I made the step this week to go vegan and I have been reading and watching a lot of documentaries. I was wondering is it okay to eat tofu or tempeh for lunch and dinner everyday. It is probably a stupid question but I am so scared about gaining weight and I want enough protein in my diet. I am loving your channel by the way! :)

      Hi Meg! Congrats to you for making the switch. If you are eating enough calories and variety of whole plants foods, you will get enough protein. Tofu or tempeh are great choices, but so are beans, some grains like quinoa or buckwheat, edamame for protein. Every plant food contains some amount of protein. But don’t be scared of gaining, just eat lots of fresh fruit, veggies, and whole quality grains and beans and legumes. Keep your plant fats on the lower end and eat until satisfied not stuffed.     I haven't tried or researched much about it myself, but have you heard of Four Sigmatic Mushroom coffee? I know mushrooms are supposed to,be good for you.

      Yes it’s a great brand and very good for you too. I take mushrooms daily for their immunity boosting properties. I definitely need to step away from the real coffee 🤪😊

    I recently added hemp hearts and fish oil to my diet.... my hair got really thin and i started feeling a bit weaker mentally. Still about 80% whole food plant based

    I eat wfpb and was wanting to drop a few pounds. I am wondering if I should track as well. Only thing is, it says I can only have 1200 calories per day to lose .5 to 1 lb a week. Your advice would be greatly appreciated.

      That’s typically what those apps suggest. I believe it’s possible to have more food and calories than that if you choose what types of food wisely. Load up on veggies, fresh fruit, have beans, and moderate consumption of starches keeping your fat low.

    What ingredients do you use for the green juice? I couldn't tell from the vid bit looks good. I also love very "green" green juice. 😂 I usually add just a couple green apples to but I find that adding a lemon (or two) makes it sweeter but lemons have no sugar. Go figure.

    Is she breast feeding? If she is and is only eating 1500 to 1800 calories a day that would explain why she’s so tired and needs coffee. You really shouldn’t be focusing so much on calories when your pregnant and breastfeeding. You need to almost double your calories when you are. Listen to your body obviously but you’re counting calories, part of a plant based diet is you don’t have to count calories, you just eat until you’re full and you’ll still lose weight.
    Plant calories are a lot different from animal and processed food calories. For one, they speed up our metabolisms which means they help us burn more calories than other food, and two calories in vs calories out is a lot higher with plants, our bodies will absorb the nutrients and then get rid of everything else instead of animal products which stay in our systems for a long time and add extra weight. You could eat the same amount of calories from a plant based diet and then a standard American “healthy” diet and you would lose more weight on the plant based one, even though you had the same amount of calories. I suggest getting more energy from eating more food instead of relying on coffee. Great video though! I’ll have to try that mashed potato trick!

      I can assure you I am eating enough calories for myself and my breast feeding supply. I am actually over producing and my baby is in the 100 percentile for growth. I would never restrict to harm myself or my baby. The reason I am tired is because I wake up 4-6
      times per night. I am eating until satisfied not over stuffed. No matter what kind of diet someone eats, if you are trying to lose weight a calorie deficit must be present. Yes you can eat more plants as they are lower calorie density, so that is awesome, but it doesn’t mean you need to overeat. I eat when I’m hungry, stop when satisfied. That’s going to look different for each person.
